Good Morning Chefs and Buyers!



Fresh Octopus is in from the Carolinas today! Octopus feed on a steady diet of crab, mollusks, prawns and other small fish. However, Octopus doesn’t have an intense flavor and can take on any flavor that you would choose. Octopus is great after proper preparation. We enjoy it grilled and in salads.






Escolar that was caught locally is in today as well. Escolar is large in size and has a buttery white flesh that is great for sashimi. It also can be treated like a great cut of Swordfish. It is a similar flavor to Swordfish but is mush creamier. We have it available according to the cut since the fish is so large.







Sweet Red Shrimp are in for tomorrow. These little spats of salty butter are perfect for any crudo or raw bar.







Ora Farmed King Salmon comes from New Zealand. It is one of the most flavorful Salmons that we carry here. Its pink flesh has nice fat lines in it. It’s perfect as a step up for any salmon recipe you may have.
