Good Morning Chefs and Buyers!


Today we have a nice selection of fish caught locally. Wild Striped Bass season is back on in Maryland and Rhode Island. We have plenty available to you. It’s a popular locally caught fish to serve because of its wonderful flavor and its versatility as to how you can cook it.





We also have plenty of local caught Yellowfin Tuna and Swordfish. These catches should display fattier meat because of the current conditions of the ocean. Fish that feed in colder waters need to eat more in order to maintain warmth. As a result they develop more fat in their meat. So in this case you will find that our Swordfish will taste more buttery, and the Tuna will resemble a nice Fillet Mignon.





We would like to mention a low cost oyster that we carry. It is the Crisfield Oyster from Maryland. These are great for frying, they have a large shell with a deep cup that contains meaty flesh. If you’re looking for a southern oyster to fry, or an inexpensive oyster to serve for happy hour, we highly recommend these.



Shad Roe season has begun which means spring is near. The Shad is a local fish that dwells in the ocean but relocates itself in fresh water to spawn. In our case it’s the Potomac River. Shad Roe is great for smoking or frying in butter.
