Good Morning Chef’s and Buyers,

Amazing Rock Crab in the house today! Not much to go around so you need to grab up as much as
you can.  These crabs are pretty meaty in both
the claws and legs and has a sweeter buttery
taste compared to the similar Dungeness crab.




Cobia! Cobia are delicious and agreeable to
basically any method of preparation. The sweet,
richly flavored meat is firm with a nice flake.
The oil content is similar to that of a coho
salmon, making for moist flesh.




We have Golden Tilefish from the Carolina’s.

Locally caught off the Montauk Coastline, Our
Wonderful Jumbo Black Sea Bass, these fish
weigh between 2-4lbs each. This fish has a
mild, fresh, somewhat delicate flavor and a
tender but firm texture.

Good Morning Chef’s and Buyers,


In the warehouse today is locally caught John
Dory. The luck every fisherman gets when
catching this fish is uncanny to any other. Many
say this fish taste like butter as it simply just
melts in your mouth.




Today We have Black Fish from Long Island.
Black fish also known by its Native American
name Tautog is found from Nova Scotia to
South Carolina. Famously known for its Mussel,
Clam crushing teeth. Black Fish have a
relatively firm white meat, which makes it ideal
for a variety of preparation methods including
fish stews and chowders.

Beautiful bright red Strawberry Grouper also in
house, the flesh of this grouper is very white
and delicate in flavor. It is easy to bone
completely and an ideal fish for the most
delicate of sauces, other than that it is an
awesome looking and tasting fish!



We also have Halibut Cheeks the size of my
Hand! These cuts come from the head behind
the eyes. They are sweeter than any other part
of the Halibut. Skinless and Boneless ready to
go for any Chef.

Good Morning Chef’s and Buyers,

We have Golden Tilefish from the Carolina’s.
Tilefish are usually found in sandy areas,
especially around coral reefs. Generally shallow water
fish, tilefish are found at depths of 50-
200 meters in both temperate and tropical
waters. Tilefish is a mild tasting white fish that
mostly feed on shrimp and crab and its sweet
flavor is similar to crab or lobster.



Today We have Black Fish from Long Island.

Atlantic Razor Clams also known as the bamboo
clam or the American Jackknife clam is a large
species of edible marine bivalve mollusk, found
on the North Atlantic Coast, from Canada to
South Carolina as well as in Europe.





Sturgeon from Florida! Sturgeon has a mild,
delicate flavor. The lean flesh is firm and
meaty, similar in texture to chicken breast or
veal. This high quality fish is fished in the Pacific
Northwest along the Southern Atlantic.
Sturgeon caviar is also excellent.

Good Morning Chefs and Buyers,


Branzino In House! 1000-1500 Grams! This is a
fish also known as the Mediterranean Sea bass.
The Branzino is similar to the Black Sea Bass in
texture. It has a mildly sweet and nutty taste.
The Bronzino can also be served as a whole.




Beautiful Sockeye Salmon, richly textured and
highly flavorful, Sockeyes are the Second
fattiest and they have the added benefit of
having the firmest texture of all Pacific Salmon.





Wild Stripped Bass Season is in Full Swing right
now in Maryland. This Fish has a very clean and
mild flavor with meat that has a firm texture.
The price will keep coming down once more
states are open and the warm weather is here
to stay.



Frozen Escolar, This firm white fleshed fish has
an incredibly rich flavor, often described as
“succulent”, or a fattier version of swordfish.
Why so rich? It turns out that Escolars diet
contains food high in wax esters. Wax esters
that are really difficult for Escolar to digest. As
a result, these esters build up in the fish.

Good Morning Chef’s and Buyers,

We have beautiful local Mahi-Mahi from New
Jersey in the house. Mahi-mahi also known as
Dolphin fish is a surface dwelling ray-finned fish
found in off-shore temperate, tropical and
subtropical waters worldwide. Mahi is a lean
fairly firmed meat fish with a sweet and mild to
moderate flavor. Mahi-Mahi means very strong
in Hawaiian.

Locally caught off the Montauk Coastline, Our
Wonderful Jumbo Black Sea Bass, these fish

mild, fresh, somewhat delicate flavor and a

Tile Fish! Their diet of crab and shrimp, etc. give
them a firm but tender, white meat with a
delicate sweet flavor. Extra lean fish, “if you
love lobster, you’ll like tile fish”





Sturgeon! With a mild delicate flavor, the lean
flesh is firm and meaty, similar in texture to
chicken breast or veal. This high quality fish is
fished in the Pacific Northwest along the
southern Atlantic. Roe, or caviar, from sturgeon
is excellent.

Good Morning Chef’s and Buyers,

Today we have East Coast Halibut from Nova
Scotia. Halibut is distinguished by its Flat Shape
and Strange appearance due to the appearance
of its eyes. On the right side when the Atlantic
Halibut changes from larva to fish, its eyes are
initially located on each side of its head.
However, during its first year of life, its body’s
morphology undergoes a major change
whereby its left eye migrates towards the right
side of its head, it then swims with its blind side
facing the sea bottom.

Today we have Razor Clams in the house. The

Good Morning chefs and buyers,


In the warehouse today is Cobia which is a great underutilized fish that lends well to summer preparations. We look forward to our shipment of Cobia arriving tonight in time for tomorrow morning's deliveries. They will weigh approximately 8-10lbs each, coming in from Panama.



Red Grouper from Florida has been pretty consistent the last couple of weeks. A member of the Sea Bass family is found in warm tropical temperatures worldwide. These fish are primarily accessible by hook and line.



Sea Trout or as some call it Weakfish is in the warehouse today. This fish is actually part of the Drum family not the Trout family as some suppose because the name it bears. When they are young they prey on shrimp and other crustaceans. As they get older they switch over to fish the bigger the better.




Once again we have Locally caught John Dory in the warehouse. This fish gets its prey by stalking other fish. It usually eats cuttlefish, squid, sardines and schooling fish. Its firm textured white flesh is moist and flaky with a low fat content.




Please be aware that Wild Striped Bass is in high demand at the moment. Prices have gone up on it because New York State is the only state open at the moment. Any questions on this matter don’t hesitate to contact your sales rep.

Good Morning Chef’s and Buyers,



Massachusetts Caught Black Sea Bass.
Wonderful Jumbo Black Sea Bass, these fish
weigh between 2-4 lbs each. This fish has a
mild, fresh, somewhat delicate flavor and a
tender but firm texture.



Black Grouper also in house today! Black
Grouper has a distinct sweet mild flavor similar
to other grouper and sea bass. The flesh is firm
yet flaky and although it is quite lean, remains
moist even when over cooked. Even culinary
experts have a difficult time distinguishing
between many species of grouper and some sea bass.



Beautiful Sockeye Salmon, richly textured and
highly flavorful, Sockeyes are the Second
fattiest and they have the added benefit of
having the firmest texture of all Pacific Salmon.





If you are looking for a choice wild fish, look no
further than the king salmon, Wild King Salmon
from Oregon, which are the largest and top-ofthe-
line among pacific salmon species. King
salmon have pronounced, butter and rich flavor
and can be enjoyed in a variety of ways.

Good Morning chefs and buyers,


Red Grouper is in the warehouse from Florida. Grouper, a member of the Sea Bass family is found in warm tropical temperatures worldwide. Groupers are primarily accessible by hook and line.

We also have beautiful local Mahi-Mahi from
Rhode Island in the house. Mahi-mahi also
known as Dolphin fish is a surface dwelling rayfinned
fish found in off-shore temperate,

Mahi is a lean fairly firmed meat fish with a
sweet and mild to moderate flavor. Mahi-Mahi

Red Snapper is lean and Moist, with a sweet,
mild but distinct flavor. The texture of snapper
ranges from soft to firm- it is the firmer fish that
are perfect for grilling. Found worldwide,
snapper is among the best fish to eat.
