Good Morning Chefs and Buyers,




Bright Red Snapper is ready for you today.  In from Florida we have sizes 6 - 8, 4 - 6, and 2 - 4 lbs.  As we all know the lean moist flesh with firm texture of this fish gives off a distinctive sweet and nutty flavor which make it versatile for many flavor components.






Maine Razor Clams available. Permanently gaping at both ends, these brittle-shelled bivalves are named for their resemblance to old-fashioned straight edge razors. Their sweet flavor excels in ant recipe calling for clams.




Fresh Halibut available, as we all know this is a lean fish with a mild sweet tasting white flesh, with large flakes and a firm but tender texture. This is a favorite among fish lovers because of its great taste and high nutritional value.





We have fresh 16/20 shrimp coming out of the Gulf. We have a huge demand for fresh shrimp this week, we sold out yesterday but we were able to bring in a limited amount today with the possibility of more tomorrow. Please put your order in as quickly as possible for this item to make sure your order is filled for the week.

Good Morning chefs and buyers,


Spanish turbot is back in the warehouse , turbot is a highly prized species (and often regarded as the best of the flat fish) with great flavor and firm white flesh. The texture is similar to halibut, but it has a slightly more pronounced “fishy” taste. Therefore it requires very little to enhance the flavor. It retains plenty of moisture during cooking, preventing it from drying out.



Once again Wild Edibles takes the lead with being able to grab some Coho Salmon with the season winding down. Chefs need to be aware there is not much time left to take advantage. This fish is looking great today, the texture is firm with high fat content. The taste is pleasingly full of salmon flavor but slightly milder than that of the sockeye. Please take advantage now!!


Live Scallops need no introduction as to how delicious they are. The soft fleshy texture and delicately mild sweet flavor of scallops are enjoyed even by those who are not particularly fond of fish or shellfish. Once shucked expect a size of approximately a 10/20 scallop.




Also in the warehouse this morning is Mahi Mahi from Guatemala. This fish has a lean flesh and a mild sweet flavor profile. Mahi is one of those fish that is wonderful just about any way you can think to prepare it from simple to complex.

Good Morning Chef's and Buyers,



Wild Striped Bass fresh in this morning from Long Island, the great looking dark striped skin crisps up beautifully when cooked and tastes great.  The flesh cooks up white and moist and has a firm texture.








Fresh Swordfish just arrived this morning. Swordfish has a mild sweet flavor and moist meaty texture with a moderately high fat content.





Grouper is in this morning from Florida.  Grouper is a lean moist fish with a distinctively yet mild flavor, large flakes and firm texture.  Groupers flavor profile is a cross between bass and halibut.






Lastly we have John Dory in from Long Island. John Dory is a delicious fish which has firm textured white flesh with moist fine flakes,  a mild sweet flavor and low fat content.

Good Morning Chefs and Buyers,


Great Sturgeon in from Florida. It has a mild delicate flavor and very meaty firm flesh.  It is the "Steak" of the sea due to its firmness when cooked.








A Monster 13 pound Blackfish came in this morning looking beautiful as ever.  Blackfish is an excellent tasting fish with firm white meat.  Its flesh
is white, dry and of a delicate sweet flavor.







Live Scallops needs no introduction as to how delicious they are.  The soft fleshy texture and the delicate mild sweet flavor of scallops are enjoyed by even those who are not particularly fond of fish or other shellfish. Once shucked expect a size of approximately a 10/20 scallop.





Fresh Jumbo Black Seabass is available today, its tender mouth watering flesh is fit for the most formal occasions.  Their white flesh is sweet and the skin is often left on and fried or crisped.

We have golden tilefish in from the Carolina’s. Tilefish is a mild tasting fish harvested from southern New England to the Gulf of Mexico. They mainly feed on crustaceans such as shrimp and crabs, and people often describe the tilefish’s sweet flavor to as similar to crab or lobster.




Also in the warehouse this morning is fresh Mahi from Guatemala. This fish has a lean flesh and a mild sweet flavor profile. Mahi is one of those fish that is wonderful just about any way you can think to prepare it from the simple to the complex. Minimal ingredients to multiple ingredients, subtle to strong flavors.

Wild Edibles gives you another treat. She's beautiful, she's exotic, she's delicious they call her Onaga!  Coming out of Florida today's fish ranges is sized from 4-6 pounds. They produce a thick large flaky white fillet and have a delectable flavor.  Onaga are prepared just like any other snapper.

Live Sea Urchins! Please get your order in since this is yet another item that words cannot express how rarely we will get this in, especially live!  Sea Urchin has a rich, creamy with a slight sweet taste.  It also has a briny slightly nutty flavor, the roe is also known to melt on the tongue and gives off an essence of the ocean in every taste.






Pick Snapper also making an appearance, this fish has a clear light pink flesh that is firm in texture. These pick snappers are coming in from New Zealand with sizes ranging from 2 - 4 pounds.

Fresh Mahi from Guatemala with with a lean flesh and a mild sweet flavor profile.  It had a moderately firm texture and large moist flakes.  Mahi is one of those fish that is wonderful just about anyway you can think to prepare it - from the simple to the complex, minimal ingredients to multiple ingredients, subtle to strong flavors.

Martha's Vineyard, MA Katama Bay Oysters are grown in the pristine waters of Martha's Vineyard, MA in a unique spot miles from the developed coastline of the mainland. Katamas have a salty start and a sweet finish.

Good Morning chefs and buyers,


Once again people just cant get enough of the Nantucket Bay Scallops. This item has taken the prize for best selling product for the last two weeks. We have a fresh batch in house to start the week. The meat is actually the abductor muscle with a creamy pink flesh and elastic to the touch. The flavor is mild and sweet with the texture being firm and moist.

Today we have a fresh batch of the popular skate cheeks, a good majority of the chefs we work with have demanded this product day in and day out. With the quantity that came in we should be able to please everyone this week. Skate is a very unique and popular fish with white sweet tasting flesh and has cartilage frame rather than bones. Skate cheeks are a really great tasting rare treat.


Also in house is locally caught Blackfish which looks fantastic today. These guys are very abundant in the fall months so take advantage of them while you still can.
