1.26.12

Good Morning Chefs and Buyers,

It's that time again.  Load up your walk-ins for what is sure to be a nice busy weekend.  The weather should stay relatively mild.  This should fill the seats from tonight through Sunday.  We have beautiful Swordfish in from Australia (Happy Australia Day).  We also have more Local Swordfish coming in overnight.  Local Tuna is here and looks beautiful.  Wild Striped Bass and Black Sea Bass are a mystery as of now.  We're being told it might be around, but we aren't holding our breath.  We are bringing in extra Golden Tilefish and Red Grouper from Florida.  Both of which will make a good substitute.  We managed to track down U/10 Scallops.  They are in from Massachusetts and we are getting more in tonight which should get us through the weekend.

Super fresh Sow Hake is also here from Massachusetts.  They are anywhere from 15 pounds all the way up to 25.  We brought in more Dayboat Icelandic Cod which is still in rigor.  We Have Nantucket Bay Scallops available today with more set to arrive tonight.  Sweet Maine Shrimp is going to be tight going into the weekend.  If you need some I would suggest ordering them early.

Portuguese Sardines arrived this morning and look delicious as always.  Our delivery of 16/20 Fresh Gulf Shrimp was cut in half.  We don't have much available.  Please order them as early as you can to ensure you get them.  Guatemala sent lovely Mahi Mahi our way.  They are 10 to 15 pounds each.

On this day in 1986, the Chicago Bears defeated the New England Patriots to win Super Bowl XX.  The game wasn't anything too memorable.  What is memorable however is  "The Super Bowl Shuffle".  This musical gem gave us unforgettable lyrics such as, "Well the call me Sweetness and I like to dance.  Runnin' the ball is like makin' romance."

Have a great day.

1.18.12

Good Morning Chefs and Buyers,

We have wonderful items for you today as you start to think about your weekend menus.  Jumbo Black Seabass looks absolutely beautiful and the price keeps dropping.  We expect more great fish to keep coming in as well.  Tuna looks like it is going to be a problem tomorrow.  We are expecting a nice shipment of them to come in tomorrow night and should be well stocked for the weekend.  The temperature has gone up a bit so we are hopeful that we might see some Nantucket Bay Scallops and Maine Shrimp tonight.

Florida is sending us some Red Grouper and Red Snapper tonight.  We already have beautiful Farm Raised Sturgeon from Florida.  Golden Tilefish looks amazing right now at 7 to 12 pounds each.  The price has also dropped as the market is flooded with fish.

Portuguese Sardines are set to arrive tonight.  We are also bringing in more Dayboat Icelandic Cod.  They are averaging 8 to 12 pounds each and are incredibly fresh.  Wild Hiramasa from San Diego is set to arrive tonight.  Whale Rock Oysters are coming our way tonight.  We've never had these before, so we aren't too sure what to expect.  The supplier sending them to us always sends great things our way so we are very optimistic.
