Good Morning Chefs and Buyers!

Valentine’s Day is tomorrow!!! We should have lobsters and fin fish galore if you get your orders in early. This will assist in making sure that your orders are filled promptly and allow us to make the necessary adjustments.

Halibut caught in Nova Scotia, Canada is a great fish to go with tomorrow. You can tell how fresh it is by its muddy, walnut smell. It’s mild, delicate flavored flesh works for any dish you have in mind, there is nothing finer for your customers. Place your order for Halibut today, because it will be tight tomorrow. Wild Striped Bass and Red Grouper are great substitutes.





Swordfish caught locally is available. Swordfish from the East Coast will have flesh that is slightly pinkish or orangish in color because of its red shrimp diet. This Swordfish will taste a bit butterier because of the icy cold waters they come from.





Shigoku Oysters are grown by Taylor Shellfish in the Willapa Bay located along the south-west Pacific Coast in Washington State. These small deep cupped oysters start out with a salt and cucumber taste and end with a nice chestnut finish. This is really the cornucopia of West Coast oysters. If Beau Soleil is the best of the East Coast then this would be its counterpart.




Cod Cheeks are coming in tomorrow. Wild Striped Bass, Golden Tilefish, Red Grouper, and Red Snapper will be available tomorrow. Black Sea Bass and Halibut could be really tight. Supply could be scarce so please, as a kind reminder, contact Wild Edibles to prepare for your orders tomorrow.
