Good Morning Chefs and Buyers!



Wild Striped Bass is not going to be available towards the end of the week. The season is closed in some of the states that we purchase our Wild Striped Bass from. What he have available today is what we will have for the week. It is our recommendation to complete any orders for Wild Striped Bass you may have tomorrow.





Swordfish is beautiful this week. One of our buyers picked this rosy specimen at the market this morning. As you can see below, Swordfish from the east coast had a rosier color because of its diet.


This is a gorgeous Red Snapper. These big reds come from Florida. It’s another popular fish for grilling.




Spanish Mackerel is small but full of flavor. It looks immaculate!          






Escolar is also available on special. Escolar is also known as “white tuna” or a more buttery version of Swordfish.
