Wonderful Brazilian Rouget in house today, it is sweet and rich with a fine, moist texture that has many bones, but is worth the work. A little goes a long way with this fish.







Sockeye Salmon- with their deep red color and fantastic flavor- are considered the most valuable species in America. They’re fished in Alaska during the summer, after spending up to four years in the pacific.

Red Grouper is in the Warehouse from Florida. Grouper is a member of the Sea Bass family and are found in warm tropical temperatures worldwide. Due to their preferred habitat around coral, Groupers are primarily accessible by hook and line.




Today we have Razor Clams in the house. The Atlantic Razor Clams also known as the bamboo clam or the American Jackknife clam is a large species of edible marine bivalve mollusk, found on the North Atlantic Coast, from Canada to South Carolina as well as in Europe.




Red Snapper is lean and moist, with a sweet, mild but distinct flavor. The texture of snapper ranges from soft to firm- it is the firmer fish that are perfect for grilling. Found worldwide, snapper is among the best fish to eat.




If you are looking for a choice wild fish, look no further than the king salmon, which are the largest and top-of-the-line among pacific salmon species. King salmon have a pronounced, butter and rich flavor and can be enjoyed in a variety of ways.

In the warehouse today we have fresh sardines from Portugal. The term sardine was first used during the early 15th Century and may have come from the Mediterranean island of Sardinia. Fresh sardines are often grilled, pickled, or smoked or they can be preserved in cans. They also are rich in vitamins and mineral as well.



In the warehouse today is locally caught John Dory. This fish gets its prey by stalking other fish. It usually eats cuttlefish, squid, sardines and schooling fish. Its firm textured white flesh is moist and flaky with a low fat content.

If you are looking for a choice wild fish, look no further than the Wild King Salmon, which are the largest and top of the line among pacific salmon species. King salmon have a pronounced, buttery and rich flavor and can be enjoyed in a variety of ways.




Beautiful Sturgeon also in house. The lean flesh is firm and meaty, similar in texture to chicken breast or veal. This high quality fish is fished in the Pacific Northwest along the southern Atlantic. Roe, or caviar, from sturgeon is excellent.






Beautiful Sockeye Salmon, richly textured and highly flavorful, Sockeyes are the Second fattiest and they have the added benefit of having the firmest texture of all Pacific Salmon.

Wild Stripped Bass Season is in Full Swing right now in Massachusetts. This Fish has a very clean and mild flavor with meat that has a firm texture. The price will keep coming down once more states are open and the warm weather is here to stay.



We have Golden Tilefish from Florida. Tilefish are usually found in sandy areas, especially around coral reefs. Generally shallow-water fish, tilefish are found at depths of 50-200 meters in both temperate and tropical waters. Tilefish is a mild tasting white fish that mostly feed on shrimp and crab and its sweet flavor is similar to crab or lobster.



In the warehouse today is locally caught John Dory. This fish gets its prey by stalking other fish. It usually eats cuttlefish, squid, sardines and schooling fish. Its firm textured white flesh is moist and flaky with a low fat content.





Also in house we have beautiful Black Cod, or Sablefish, which is long-line caught in the deep, cold, clean waters of Alaska. The best fish are harvested in the summer and fall when the fish feed heavily on crab and squid building up oil reserves.

Good Morning Chefs and Buyers,

The star of the day is undoubtedly our fantastic Jumbo Black Sea Bass. Locally caught off the Montauk coastline, these fish weigh between 2 and 4lbs each. The fish are so fresh that most are still in rigor even as I write this email. The blue sheen evident on the scales of each fish is a sure sign that these were in the water a matter of hours ago. We recommend you take advantage of these Black Sea Bass while you can.





Today we also have beautiful east coast Halibut from Nova Scotia. Halibut is distinguished by its flat shape and strange appearance due to the appearance of its eyes.







Local Wild Striped Bass is in the warehouse today and looking better than ever. What’s just as exciting as the quality is the price of wild striped bass right now with multiple states open. Striped bass are one of the species most sought-after by recreational anglers around the Bay. Hook-and-line is the primary gear used by recreational anglers, which has limited or no effect on habitat. Recreational landings for striped bass make up roughly 75-80% of the coastal landings.

Beautiful Opah in House today, Long line Tuna fishermen snag these beauties from time to time during their short trips in the deep waters of the South Pacific making them a wonderful special to offer this week. Before Opah became commercially viable, Opah was thought of as a good luck sign by fishermen and given away to friends as a way to pass the good fortune along.





Wild King Salmon from California in house today. It’s the largetst of the 5 salmon species. The fish are prized for their red meat, rich flavor, high oil content and firm texture.




We have Black Fish from Virginia. Black fish also known by its Native American name Tautog is found from Nova Scotia to South Carolina. They prefer Structured Habitat and are frequently found near piers. Black Fish have a relatively firm white meat, which makes it ideal for a variety of preparation methods including fish stews and chowders.

Today we have Black Fish from Long Island. Black fish also known by its Native American name Tautog is found from Nova Scotia to South Carolina. They prefer Structured Habitat and are frequently found near piers. Black Fish have a relatively firm white meat, which makes it ideal for a variety of preparation methods including fish stews and chowders.

And finally, visually stunning Baby Octopus. Either as an appetizer or main course, grilled baby octopus is a stunning meal that will please both the eyes and the palate. Has a delicate that’s slightly sweet and similar to that of a scallop.

Also in the house today we have Norwegian Cod, Which has been an important economic food group since the Viking period around 800 A.D Norwegian Cod is a firm textured fish with large flakes and has a mild sweet taste.




We also have beautiful Mahi-Mahi in the house. Mahi-mahi also known as Dolphin fish is a surface dwelling ray-finned fish found in off-shore temperate, tropical and subtropical waters worldwide. Mahi is a lean fairly firmed meat fish with a sweet and mild to moderate flavor. Mahi-Mahi means very strong in Hawaiian.

We have a beautiful treat for everyone coming in tonight is Wild Nunavut Arctic Char. The Nunavut territory, up at the top of the world is flat, tree-less tundra stretching as far as the eye can see. Most of the year is ice and snow against a cold gray sky. Out of this extreme environment comes a fish of amazing delicacy and depth, with flesh as vibrant as the landscape is bare. Cold waters make for fish with a high fat content and the intensely cold waters of the arctic guarantee an incomparable richness.



Wild King Salmon is in the house from Alaska. Wild King Salmon is the largest of the 5 salmon species. The fish are prized for their red meat, rich flavor, high oil content and firm texture.
