5.30.12

Good Morning Chefs and Buyers,

It feels like this nasty weather is working it's way out of the area.  This should help fill up the seats.  Local Swordfish is gorgeous today.  It didn't show up yesterday, but what we got today is fantastic.  The same shipment brought us more Local head on Mahi Mahi that also look super fresh.  Local Sea Trout were a nice surprise this morning.  They are anywhere from 2 to 5 pounds each.

Tomorrow is our weekly shipment of Portuguese Sardines.  These are always great.  Golden Tilefish came in from Florida this morning and weigh about 10 pounds each.  Grey Tilefish is in from Virginia.  They are a bit smaller at around 6 pounds, but the quality is wonderful.  3/4 Chilean Turbot looks like a good idea for a special.

We brought in a few new oysters to try out today.  Fire River Oysters are a medium size and have a high salt and mineral content.  They are coming to us from Richibucto, New Brunswick Canada.  We also brought in Taunted Inlet Oysters from Maine that are similar in size and salinity.  Icelandic Dayboat Cod is set to arrive tonight.  This is great news because the Cod we've been getting from Massachusetts lately has been very small.  These fish are usually between 10 and 12 pounds each.  Bloody Monkfish Tails came in from Boston this morning.  We also brought in more Jumbo Black Sea Bass.  The price is holding nice and low too.  Wild Striped Bass from Rhode Island are coming in with some regularity which is a nice relief.  We should be seeing them daily barring any issues.

5.29.12

Good Morning Chefs and Buyers,

It's back to the grind after the holiday.  We got lucky this morning.  Normally after a holiday we see limited availability on many items.  But we are in good shape today.  We have 3 types of Wild Salmon from Alaska available.  Wild King Salmon are about 12 pounds each.  Sockeye Salmon are around 6.  We also have Steelhead that are around 6 pounds as well.  All 3 are head off and gutted; so you are sure to get a great yield.  Maine Lobsters are here today and are climbing out of the tanks.  Dayboat East Coast Canadian Halibut are a can't miss today at 10 to 40 pounds.

Rhode Island Wild Striped Bass look wonderful this morning.  They are available in a variety of sizes.  Blackfish from Boston made a surprise appearance today.  Fluke remains a problem.  There simply aren't enough around to fill demand.

We brought in wonderful Tuna from the Galapagos Islands and have Local fish on their way here.  We are also getting Local Swordfish and Mahi Mahi tonight.  U/10 and 10/20 Scallops are incredibly fresh our of Barnegat Bay, New Jersey.  Grey Tilefish from North Carolina are weighing in around 6 pounds.

Corvina from Ecuador is available.  We don't have any more today, but should be able to get more overnight.  Kona Kompachi is also available overnight.  16/20 Fresh Gulf Shrimp are perfect as always.  Red Snapper came in from Florida and are really fresh.

5.23.12

Good Morning Chefs and Buyers,

It isn't raining!  This is sure to fill up those seats tonight.  It also means we should see lots of fish coming in over the next few days.  We have some wonderful items available this morning.  Icelandic Dayboat Cod look terrific at 10 to 12 pounds each.  We are actually starting to see some Wild Striped Bass.  The fish are coming to us from recently opened Rhode Island.  Grey Tilefish from Virginia look great.  And this is good because Golden Tilefish is currently not around.  Dayboat East Coast Canadian Halibut are great as always and weigh 10 to 40 pounds.

New Zealand Pink Snappers are set to arrive tonight.  They usually weigh in at around 2 to 4 pounds.  Tomorrow is our weekly shot of Sardines from Portugal.  They tend to fly out of here, so order them early.  3/4 Turbot from Chile look great today.  Wahoo is in from South America.  The fish is big; we will cut you whatever size you need.

Siberian Sturgeon that is farm raised in Florida are flawless as always.  Red Grouper also came in from Florida.  They weigh between 5 and 10 pounds each.  Red Snappers have bright red gills to match this morning.  16/20 Fresh Gulf Shrimp are amazing as usual.

Wild Salmon is starting to trickle in from Alaska.  Wild King and Sockeye are both available.  They are coming from the Columbia River and are the same price.  They do however vary in size.  The King Salmon are around 14 pounds each and the Sockeye are averaging about 7 pounds.

5.22.12

Good Morning Chefs and Buyers,

Hopefully the lousy weather isn't scaring off too many customers.  It is doing a number on fishing grounds up and down the east coast.  We still managed to get our hands on some wonderful items this morning.  Dayboat Cod from New England is here.  We are still hoping to bring in some Icelandic Cod to help with the high price.  But so far, we haven't had any luck.  Flounder looks great coming out of George's Bank.  Fluke tends to dry up this time of year and the bad weather sure isn't helping matters.  Jumbo Black Sea Bass prices are down again!  Enjoy them now.  This is the best time of year for these fish and unfortunately, the price tends to get so low that fishermen stop going after them and they vanish.

Maine Lobster prices are finally showing signs of coming down.  They are down a bit today and we expect a larger drop in the weeks to come.  Local Sword and Tuna both look great today.  We also have Bigeye Tuna from Hawaii coming in tonight.  Wahoo from South America is here and more is available.  The fish we brought in is quite large.  We will happily cut you whatever size you need.  Grey Tilefish from Virginia is available this morning.  They average around 6 pounds.

Beautiful Dayboat 10/20 and U/10 Scallops keep coming in every morning from Barnegat Bay, New Jersey.  East Coast Canadian Dayboat Halibut that range from 10 to 40 pounds are in today.  We are also seeing our first glimpses of Copper River Sockeye Salmon.  They are around 7 pounds each.  The price is high now, but it should come down as soon as the fish become more available.

5.21.12

Good Morning Chefs and Buyers,

A new week is here.  We're starting it off right with some fantastic local items.  Sea Trout are super fresh and weigh between 3 and 5 pounds.  Swordfish and Tuna came our way this morning from boats that fish from North Carolina up to New Jersey and ship directly to us.  We always get the best quality fish from this supplier.  Jumbo and Whale sized Soft-Shell Crabs appear to be the only sizes available right now.

Jumbo Black Sea Bass out of Boston continues to hold it's nice low price.  Wild Striped Bass is starting to trickle back in.  They are coming from Delaware, but are still very limited.  I recommend ordering them in advance.  U/10 and 10/20 Scallops came in from our friends in Barnegat Bay, New Jersey.

Shad Roe is making another appearance.  We are expecting it to be available for at least a few days.  Wild King Salmon is coming in from Alaska.  The fish average around 12 pounds and come in with the head off and gutted.  East Coast Canadian Dayboat Halibut is very fresh this morning.  They range in size from 10, all the way up to 40 pounds.

Fresh 16/20 Gulf Shrimp are terrific as always.  Red Snapper of all sizes came in this morning too.  Smaller sizes have been a problem for a while now, but we might be out of the woods.  Golden Tilefish, also from Florida, couldn't be fresher today and average about 8 pounds each.

5.17.12

Good Morning Chefs and Buyers,

It's time to plan those weekend menus.  We brought in some wonderfully fresh items today and have more great stuff coming in overnight.  Local Swordfish pricing and quality can't be beat today.  Local Tuna of all grades is also available.  John Dory from local waters look terrific at 2 to 4 pounds each.  Soft-Shell Crabs are being a bit of a problem.  It looks like Jumbos are your best bet.  Other sizes are really hard to come by.

Jumbo Black Sea Bass out of Boston went down in price again.  The quality is still excellent and they weigh between 3 and 5 pounds each.  It looks like Cod is going to be a problem.  We weren't able to get any more Icelandic Cod so we are at the mercy of the Market Dayboat Cod from New England.  They are really nice quality, but availability and price are the main concerns.  Fluke is also an issue this week.  We are bringing in more large Flounder from George's Bank to help fill the void.  Dayboat East Coast Canadian Halibut are absolutely gorgeous today.  They range in size from 10 all the way up to 40 pounds.

Maryland and Louisiana both sent us incredibly fresh Crabmeat this morning.  Rain has forced closures for Uni.  We won't see any from Maine until at least Monday.  Sardines from Portugal are great as always.  We got lucky and tracked down some Monkfish Liver.  They are cheaper than the last time we brought them in and will make a great special.

5.16.12

Good Morning Chefs and Buyers,

Beautiful Local Swordfish keeps pouring in here and the price is down this week.  Mahi Mahi is also coming in from Local fishing grounds.  They average about 15 pounds with the head on.  4 to 6 pound Sea Trout look like a great choice for a special.  Albacore Tuna is still available today too.  The fish average about 30 pounds each.

Black Sea Bass from Boston continues to look fantastic and the price is still down.  Blackfish, also from Massachusetts, couldn't be fresher and weigh between 3 and 6 pounds.  We have both Spanish and Boston Mackerel available today.  Unfortunately, it appears Razor Clams won't be available for a few days due to the lousy weather we've been having.

Tomorrow is our weekly delivery of Sardines from Portugal.  They are always lovely but tend to fly out of here.  Please order them early.  Red Grouper from Florida continues to come in super fresh.  They range in size from 5 to 10 pounds.  Siberian Sturgeon that is farm raised in Florida look flawless as always.  Farmed King Salmon from New Brunswick, Canada are finally coming in regularly.  We don't have many, so please order them in advance.

5.15.12

Good Morning Chefs and Buyers,

We brought in some wonderful items this morning.  Local Tuna of all grades and Swordfish are readily available for a change.  We also brought in more Local Mahi Mahi.  All of these fish are caught between North Carolina and New Jersey and are always super fresh.  Albacore came in again this morning too.  The U/10 and 10/20 Scallops from Barnegat Bay, NJ are perfect today.

We are bringing in more Icelandic Dayboat Cod tonight.  These fish are usually still in rigor when they get here and range from 10 to 14 pounds each.  Gorgeous Dayboat Halibut came in from the east coast of Canada this morning.  They range from 10 to 40 pounds each.

Blackfish that weigh between 3 and 6 pounds came in from Massachusetts.  Black Sea Bass from Boston is down in price again.  Whitebait from the Great Lakes showed up again this morning after pulling a disappearing act last week.  Golden Tilefish from Florida look great at 6 to 8 pounds.  We also brought in more Grey Tilefish from North Carolina that are a bit smaller at 4 to 6 pounds each.

5.10.12

Good Morning Chefs and Buyers,

Mother's Day is right around the corner.  Make sure you are stocked up on everything you'll need for what is sure to be a very busy weekend.  We have all grades of Local Tuna available.  Local Swordfish Pups couldn't be fresher today.  Long Island sent us some nice 5+ bloody Monkfish Tails this morning.  It looks like there is going to be NO WILD STRIPED BASS AVAILABLE.  The fish they are catching in Massachusetts are still too large to legally sell in New York.  Please keep this in mind when planning your menu.

Jumbo Black Sea Bass from Boston continues to drop in price consistent with the Red Sox drop in the standings.  Blackfish is also in from Massachusetts and look great at 3 to 6 pounds each.  Razor Clams are still coming in from Maine, but we aren't sure for how much longer.

East and West Coast Halibut both look terrific today.  They range in size from 10 to 40 pounds.  Amberjack from North Carolina are gorgeous and are 4 to 6 pounds.  We are finally going to be fully stocked on Oysters tonight.  We have lots of variety coming in from Canada and the West Coast just in time for Mother's Day.  Portuguese Sardines showed up overnight and they look fantastic.

Florida isn't messing around today.  They loaded us up with beautiful items.  Red Grouper and Red Snapper both look great.  Pink Snappers also came in this morning.  16/20 Fresh Gulf Shrimp are a can't miss as usual.  We also got in some more Cobia that are about 15 pounds each.

5.8.12

Good Morning Chefs and Buyers,

We are excited to inform you that we will be adding another option to our Frozen Squid selection.  5/8 Domestic Tubes and Tentacles from Rhode Island.  They are the same 2.5 pound packages and come in a 50 pound case rather than 30 pounds.  Of course, we will happily open a case and send you just what you need.  We tried some out yesterday, and the quality is excellent.  Let us know what you think when you get some.  We are eager to hear from you.  Local Swordfish and Mahi Mahi are en route and will be available in the morning.  Wild Striped Bass is still a problem.  Although Massachusetts is fishing, the fish they are pulling in are too big to legally sell in New York.  We hope this clears itself up soon.  Jumbo Black Sea Bass continues to look great and the price is holding.  Dayboat Cod, though small, are terrific quality coming out of New England.

The biggest Golden Tilefish I have ever seen is here.  It is well over 30 pounds out of Florida.  We also have some nice 4 to 8 pound Grey Tile from North Carolina available.  Fresh 16/20 Gulf Shrimp are beautiful as always.  Panama is sending us Red Grouper tonight.  They are always great and should be 5 to 10 pounds each.  Cobia came in from Florida this morning and are super fresh.  They are around 15 pounds each.

Razor Clams are still available from Maine today.  Whitebait came in from the Great Lakes.  East and West Coast Halibut are available in 10 to 20 pound fish.  We are having a problem with East Coast Oysters.  Currently variety is sparse.  We have Cook's Cocktail's out of Maine, Conway Creek's also from Maine, and St. Simone's from Virginia.  We will keep you posted as to when we can get more.

5.3.12

Good Morning Chefs and Buyers,

It's that time of the week again.  The weekend is right around the corner and the weather is supposed to be lovely.  That should help business after all the rain we've seen the last few days.  Local Swordfish and Tuna couldn't be fresher today.  These boats fish from North Carolina to New Jersey and only send us the best fish.  New Jersey also sent gorgeous U/10 Scallops our way.  They are starting to harvest a new location.  This means the scallops are all rather large and 10/20's are going to be tough to come by.  Local Dory are on the bigger side today at 3 to 5 pounds each.

We brought in some really fresh 4 to 8 pound Red Snappers from Florida.  Unfortunately, anything smaller is going to be a problem.  We brought in Florida Pink Snappers that are 2 to 4 pounds to help cover the difference.  Louisiana and Maryland sent us amazing Lump and Jumbo Lump Crabmeat.  Our weekly delivery of Portuguese Sardines showed up this morning and are great as always.

We brought in the last Blackfish we're going to see for a while this morning.  The season in Massachusetts is over.  Jumbo Black Sea Bass has a new low price and the fish are beautiful.  East and West Coast Halibut will be available this weekend.  We still aren't seeing any Dayboat Cod from New England.  We brought in more of that fantastic quality Icelandic Cod that are 10 to 12 pounds each.  Walleye Pike from the Great Lakes are pretty big.  Most of them are around 5 pounds.  Last but not least, Ivory King Salmon from Alaska are available.  They are about 10 pounds each, but we've seen them up to 30 pounds!

5.2.12

Good Morning Chefs and Buyers,

Hopefully the weather isn't scaring off any customers.  We got our hands on some Shad Roe from Connecticut.  We should be able to get more, but it's a little hit or miss.  Beautiful Dayboat U/10 Scallops from Barnegat Bay, NJ keep coming in everyday.  Unfortunately, #2 Tuna is still a problem.  We have plenty of #1 and 2+ available to sub.  Live Rainbow Trout from a hatchery in western New Jersey came in again.  These fish are pulled directly from their tanks and into our truck.

Red Drum from North Carolina looks great.  The fish are huge, but we will happily cut you whatever size fillet you need.  Halibut from Alaska is incredibly fresh today.  We will also have East Coast Halibut available should we run out.  Louisiana sent us incredibly fresh Lump and Jumbo Lump Crabmeat this morning as well.

Chilean 3/4 Turbot looks like a fantastic idea for a special.  Tomorrow is our weekly shipment of Portuguese Sardines.  These delicious treats tend to fly out of here, so get your orders in early.  Icelandic Dayboat Cod is on it's way here again.  Dayboats in New England are back out fishing, but the poor weather is likely to delay any real amount of catch.  We are hopeful to start seeing them next week.

Today in 1939, Lou Gehrig's amazing 2,130 consecutive games played streak ended when he benched himself due to poor play.  He had been showing symptoms of amyotrophic lateral sclerosis (ALS) since the 1938 season.  The disease was difficult to diagnose due to its rareness.  It is now referred to as Lou Gehrig's Disease.  He never played again.  Two months later on July 4th, fully aware he was dying, he gave his now iconic speech in front of 60,000 fans at Yankee Stadium stating, "Today, I consider myself the luckiest man on the face of the earth."  He died less than 2 years later with his wife Eleanor by his side.

5.1.12

Good Morning Chefs and Buyers,

We brought in some really great items today.  Jumbo Black Sea Bass continues to look great.  These trap fish are coming to us from Boston.  Although the dayboats are back out on the water, the lousy weather will probably slow down Cod fishing.  We brought in extra Icelandic Cod to hold us over.  Massachusetts opened Wild Striped Bass season today.  We probably won't see any fish for a few days, but this should help pricing down the road.  Whitebait is back from the Great Lakes.  Local Monkfish Tails are huge today.  Some of them are 10 pounds.  Barnegat Bay, NJ sent us incredibly fresh U/10 Scallops this morning.

West Coast Halibut is available.  The fish look great and are 10 to 20 pounds each and coming in from Alaska.  Troll Caught Wild King Salmon is also available from Alaska.  The fish are $15/lb and average between 10 and 15 pounds.  Scottish Salmon also made a nice comeback today.

After being cleaned out on Swordfish yesterday, our buyer tracked down a 370 pound monster from Hawaii.  Guatemalan Mahi Mahi looks amazing this morning.  The fish are already gutted with the head off and they weigh between 5 and 20 pounds.  Chile sent us more 3/4 Turbot today that looks great as well.

Today in 1931, The Empire State Building was dedicated.  President Hoover flicked the ceremonial switch to turn on the lights.  It was just for show.  The real lights were turned on within the building as President Hoover was in Washington.  It is said the idea for the building was born from a competition between Walter Chrysler and John Jakob Raskob.  Chrysler had already begun construction on the iconic Chrysler Building.  However, the simpler art-deco design of the Empire State Building allowed construction to move swiftly.  This was much needed work for Depression stricken city workers.  The building held the title of the world's tallest skyscraper until 1972.
