Good Morning chefs and buyers,


Fresh Jumbo Black Sea Bass available today, its tender mouthwatering flesh is fit for the most formal of occasions. Their white flesh is sweet and the skin is often left on and fried or crisped.







We also have Coquina Clams in today. These delicious little gems are from New Brunswick Canada. In the America’s the Indians collected them off the beaches most notably along the Atlantic south east and California coast. The coquina is among the smallest among edible shellfish. So please enjoy this awesome clam.



We also have golden tile fish in from the Carolina’s. tile fish is a mild tasting fish harvested from southern New England to the Gulf Of Mexico. They mainly feed on crustaceans such as shrimp and crabs, and people often describe the tile fish’s sweet flavor to as similar to crab or lobster.




We have Mahi Mahi in from Guatemala. The are averaging 10 to 15 pounds each. Mahi Mahi means very strong in Hawaiian.

Fresh Virginia Wahoo in the house today, Whaoo if from the Hawaiian word "ono" which means "good to eat".  It is closely related to king mackerel.  It has a mild-sweet taste, firm texture, moderate fat content and large circular flakes when cooked.  The flesh is a beautiful white color and remains white when cooked.


Wild Cobia, a 70 lb Monster!  It's has a clean, firm yet moist white meat and is both sweet and richly flavored.  Like tuna, the meat from various parts of the fish has distinctive qualities and as such the fish has a large range of applications.







Black Cod from British Columbia is a succulent white-fish with loads of flavor.  Chefs love this fish because of its versatility in the kitchen and its flaky silky textured flesh.  The moist white mead is loaded with Omega 3 oils.







Bright Red Snapper ready to go for you today.  In from Florida we have sizes 6-8, 4-6, and 2-4.  As we all the lean moist flesh with firm texture of this fish gives off a distinctive sweet and nutty flavor which makes it versatile for many flavor components.

Good Morning chefs and buyers,


Moon fish have been moving quickly for us.  Moon fish, A.K.A. the Sea Angel is a cross between Pompano and John Dory. A thin circular fillet is what you can expect from this shiny tropical beauty. These fish are averaging 1 to 3 lbs. each and can be served the same way you would any tropical fish.



Permanently gaping at both ends, these brittle-shelled bivalves are named for their resemblance to old-fashioned straight edge razors. Their sweet flavor excels in ant recipe calling for clams.

Red Drum fish has a mild sweet flovor with firm and large moist flakes.  It is comparable to a red snapper.  It has fine texture and tender flesh, we may not have much to go around so please grab as much as you can as soon as you can.

Good Morning Chefs and Buyers,


New item in today from Trinidad is Moon fish, A.K.A. the Sea Angel is a cross between Pompano and John Dory. A thin circular fillet is what you can expect from this shiny tropical beauty. These fish are averaging 1 to 3 lbs. each and can be served the same way you would any tropical fish.



Wild Cobia made it in on time today from Florida. Cobia gets its firm texture feeding on squid as it migrates its way from the Gulf of Mexico as far north as Maryland only turning back south to spawn in the warm Gulf.





Golden Tile is Rich in Omega 3 and 6 as well as Potassium. This always popular item gets its unique flavor from a steady diet of shrimp, crab, and urchin. This shy species burrows into the sea floor, and waits for their next meal to happen by.





Wahoo/Ono are built like a torpedo, and swim almost as fast. That along with the fight they put up when hooked make them a popular choice for sport fisherman. Despite their athletic ability the flesh of Wahoo is flaky and delicate. High in protein and B vitamins Wahoo makes a great special to start off the week.

Everyone must take advantage of the fact that we have Coho Salmon in the house today, the season will be ending soon and it will become difficult for everyone across the board to get any.  Great looking fish today, the texture is firm with high fat content, the taste is pleasingly full of salmon flavor but slightly milder than that of sockeye.  Take Advantage NOW!


Fresh Sardines from Portugal will also be available.  When fresh, small sardines have a delicate flavor while larger fish have a fuller, oilier flavor similar to anchovies but milder.  In the US, most sardines are canned in oil or a sauce, smoked, pickled or salted.  Today we offer them to you fresh!




Wonderful Boston Mackerel is ready to go, mackerel is as leek oily fish that contains two kinds of meat, the red outer meat and the light inner meat.  It has a firm texture and distinct taste.  Boston Mackerel contains more that twice the amount of Omega3 fatty acid that Salmon, in other words Healthy Fish!



Live Sea Urchens will be available tomorrow, please get your order in since this is yet another item that words cannot express how rarely we will get this in, especially live!  Sea Urchin has a rich, creamy with a slight sweet taste.  It also has a briny slightly nutty flavor, the roe is also known to melt on the tongue and gives off an essence of the ocean in every taste.

Wild Edibles once again brings you a rare item to take advantage of, Canadian Red Shrimp A. K. A. Maine Shrimp.  The season usually opens December 15th but we were lucky enough to grab a hold of them now.  These small crustaceans with bulbous black eyes are colloquially dubbed "salad shrimp" because of their 2-4 inch physiques.  These shrimp have a sweeter, more delicate flavor than those reared in the Gulf of Mexico because of the colder waters.

We have Fresh Octopus in the warehouse this morning from Florida. The octopus range anywhere from 1-2 lbs. This item is a real treat please plan ahead because it will sell out.





Wild Striped Bass also known as Atlantic Striped Bass, Striper, or Rockfish is the state fish of Maryland, Rhode Island, South Carolina and the state saltwater fish of New York, New Jersey, Virginia, and New Hampshire. The fish we have right now are running around 12-15lb fish.




Also in the warehouse this morning from Florida is Red Grouper. Which is a member of the Sea Bass family and are found in warm tropical temperatures worldwide. Due to their preferred habitat around coral groupers are primarily accessible by hook and line.




John Dory, also known as St. Pierre or Peter’s Fish is an edible benthic coastal marine fish with a laterally compressed olive-yellow body which has a large dark spot, and long spines on the dorsal fin. The dark spot is used to flash an “evil eye” if danger approaches. Its large eyes at the front of the head provide it with binocular vision and depth perception, which are important for predators.

Good Morning chefs and buyers,


Great looking fresh Tile fish just came in this morning from the Carolinas, their diet consist of mainly crab and shrimp which gives them a firm but tender white meat with a delicate sweet flavor. Extra lean fish.






People just can’t get enough of these Nantucket Bay Scallops, taking the prize for best selling item for the past 2 weeks, a fresh batch of Nantucket Bay Scallops in house to start the week. The meat is actually the abductor muscle with a creamy to pink flesh and elastic to the touch. Flavor is mild and sweet with the texture being firm and moist.


Turbot finally back in house, turbot is a highly prized species (and often regarded as the best of the flat fish) with great flavor and firm white flesh. The texture is similar to halibut, but It has a slightly more pronounced “fishy” taste, so require very little to enhance the flavor. It’s a chefs dream, as it retains plenty of moisture during cooking, preventing it from drying out.

Red Drum Fish has a mild sweet flavor with firm flesh and large moist flakes. It is comparable to a Red Snapper. It has a fine texture and tender flesh, may not have much to go around so please grab up as soon as possible.

Good Morning chefs and buyers,


Today we have a fresh batch of the popular skate
cheeks, a good majority of the Chef’s we work with
have demand this product day in and day out, we
should be able to please everyone this week. Skate is a very unique and popular fish with white sweet tasting flesh and has cartilage frame rather than bones. Skate Cheeks are a really great tasting rare treat.



Cobia will also be the star for Wild Edibles this week. Raw cobia meat is light tan and when cooked turns snowy white. The sweet, richly flavored meat is firm with a nice flake. The oil content is similar to that of a Coho Salmon, making for moist flesh.



The popular Icelandic cod will make its mark this week as well, turning a bright white color when prepared our cod beacons from the plate. Cod has a wonderfully mild taste that is complemented by its large flakes and delicate texture. Cod is a versatile fish that adapts well to many spices, sauces and presentations.

Good Morning chefs and buyers,


Today we have exquisite Nantucket Bay Scallops. These wonders are about the size of the tip of your thumb, the meat itself is the abductor muscle of the scallop and has a sweet mild taste that is unequalled anywhere! Its biggest secret is its ability to be served raw when fresh or to be caramelized, Enjoy!



Razor Clams have a firm texture, mild brininess and a mild clam flavor. They are usually cut into steaks and served, or diced/ground to use in chowders, fritters, etc.






Check out this Monster Swordfish! 300+ pounds fresh in house today. As you know, swordfish has a mild sweet flavor and it is also moist and meaty. The flesh can range from white or ivory to pink or orange.





Also back in action is the good old blackfish or “poor man’s lobster” has a mild sweet flavor with firm flesh and large moist flakes. The batch we have in today is from the local waters of long island and is prized by local fisherman.
