Wild Edibles Newsletter 4-9-2013

Good Morning Chefs and Buyers!

Snapper is going to be unavailable. We received word that Thursday is the soonest possible date Red Snapper will arrive. We suggest Black Sea Bass as a substitute for the smaller sized, 1 – 3 pound Snappers.

East coast Oyster production is going to be slow for the next week. Ice cold weather up and around Prince Edward Island and New Brunswick is freezing some of the bays over. This will affect some regular oysters we carry such as Fire River and Beau Soleil.



Local Swordfish is available. The Swordfish we received was long lined off the shores of New Jersey.








We brought in Icelandic Cod. The only difference between Atlantic Cod and Icelandic Cod is purely location. They are the same exact species. And we receive it in such great condition that is remains in rigor for days.






Alaskan Black Cod shipments came in this morning. Black Cod is also known as Sablefish. It has a mild flavor with a soft, flakey texture. The closest comparison would be Chilean Sea Bass.







We received a nice shipment of Razor Clams from Massachusetts. Wild Striped Bass from Delaware, Red Grouper from Florida, and Local Tuna grade #1, #2+, and #2 are in stock.
