Wild Edibles Newsletter 4-3-2013

Good Morning Chefs and Buyers!

We brought in some spectacular seafood in this morning. But before that, let’s get to some upcoming issues this week. Some items won’t be available or the supply will be inconsistent.

Mahi is not coming in this week. If you do consistently use Mahi on your menu, we suggest trying our frozen Mahi. They are Individually Vacuum Packed in 4 – 5 pound fillets.

Processed Fresh Crab Meat such as “Lump” and “Jumbo Lump” is still not available. Also Jonah is going to be inconsistent as well.

Wild Striped Bass from North Carolina is going to be available for the week. It looks spectacular!

Cod, Hake, and Pollock from Gloucester, Massachusetts is available. Gloucester is an important fishing city because of its accessibility to the Georges Bank and other important fishing locations that are near. The quality that comes from this fishing port is excellent. You will happy that you purchased it for your patrons.
(From top to bottom: Hake, Pollock, and Cod)

Sturgeon from Florida is going at a special price this week. Call and ask about it’s availability.

Lobster Prices are slowly creeping down. By this time next week we should be back to single digits.

Soft Shell Crabs are slowly becoming available. We are able to acquire “Whales” from Maryland for tomorrow. However pricing will be high for them until more are released into the market.
