Wild Edibles Newsletter 4-2-2013

Good Morning Chefs and Buyers!

We apologize if you had any inconveniences with availability. The market was closed yesterday morning. We received shipments overnight and stocked up our warehouse with some spectacular seafood from the market this morning.

Halibut season opened on the West Coast (Alaska). There is no detectable difference in taste or appearance between East/West Coast. The appearance of the fish looks great, you’ll find the taste and quality is the same. What you will notice is the drop in price because of the increase in supply.

Swordfish caught off the shores of New Jersey is in stock. This is great because you have a quality fish that is long lined in local waters that hasn’t traveled far to get here. Pick up some while it is still in stock for tomorrow.

Razor Clams from Maine arrived. They look stunning!

Pike from the Great Lakes is so fresh it is still in rigor. I couldn’t even get this fish to lay flat for a picture.

We will have Sturgeon from Florida at a special price for this week. Contact your Representative for information.
