Wild Edibles Newsletter 4-10-2013

Good Morning Chefs and Buyers!

American Red Snapper is going to be available tomorrow. We will definitely have a shipment after not having it available for the last couple days.

Weakfish is available this week. Weakfish is from the Drum family and are predatory fish that feed mostly on clams and other small fish such as herring. The flesh of weakfish is white, sweet, lean and finely textured. Weakfish makes a delicious meal when fried or broiled.

Nantucket Bay Scallop season is almost over. These small scallops average about 30 – 40 pieces a pound. These “little marshmallows” have a nice, soft, sweet flavor. We have them in stock so enjoy them now while they are still available.

Local New Jersey Swordfish is available. These were long lined in deep ocean waters. There virtually no damage to the external environment and they haven’t traveled far to reach here. You will find the quality of the Swordfish is spectacular.

We also have Wild Striped Bass and Black Sea Bass from Delaware in stock. Icelandic Cod is available. Sardines from Portugal arrive tomorrow.
