Good Morning Chefs and Buyers!


We won’t have 16/20 Fresh Shrimp, Nantucket Bay Scallops, Grouper, Tilefish and Razor Clams available for the weekend. The winter storm disrupted much of our overnight shipments making it impossible to have available. We do have plenty of other options for you to make substitutions.



Wild Striped Bass is a great substitute for Grouper. It’s local, and easy to cook and sell. The mild flavor of the meat and the crispy texture of the skin is what makes Wild Striped Bass so good on the plate.






Halibut from Nova Scotia is available. Halibut is a flat fish that thrives in cold waters and feeds on small fish, squid, and whatever else that comes across its path. Halibut has delicate, sweet flavored meat.






Cod is available at a spectacular price. They are nice, large and fresh. We acquired them from Massachusetts. Cod is versatile because it absorbs any flavor and can be presented in a variety of methods.





U-10 and 10/20 Day Boat Scallops from Southern New Jersey are available as a substitute for the Nantucket Bay Scallops. These are perfect to get you through the weekend. They sear nicely and work great in ceviche.
