Wild Edibles Newsletter 3-12-2013

Good Morning Chefs and Buyers!

Lobster prices are still climbing because of a lack of supply. Fisherman hasn’t been able to go out this week keeping our supply short. Farmed Salmon prices are increasing as well due to lost supply from the recent cold up North.



We brought in beautiful Head-On Mahi Mahi from Panama. Mahi are carnivorous fish that spend their lives in migration searching for food. They are highly sustainable and the meat is delicious.







Rouget from the Mediterranean Sea are in stock. These little red fish are great to serve whole. Grilling them is one of the better ways to cook them.







Blowfish Tails were brought in. Blowfish tails taste very similar to chicken wings. They are easy to fry as an appetizer. You can serve them with almost any dipping sauce in your recipe collection.







Fresh Octopus from North Carolina is here. Fresh Octopus is a popular item when in stock. Some Chefs like to prepare them and preserve them for later use. They are great as an appetizer, in any salad, or as a nice main course.
