Wild Edibles Newslerrer 3-25-2013

Good Morning Chefs and Buyers!




We brought in a nice supply of seafood from the market this morning. Wild Striped Bass from Virginia is available at a great price. We also have Black Sea Bass caught in Virginia as well.






Swordfish is in stock and looks spectacular. The Swordfish we acquire is line caught locally off the shores of New England.




There is plenty of Yellow-fin Tuna #1 available today. Yellow-fin Tuna #1 is line caught locally. The colder waters of the Atlantic Ocean give the Tuna a better fat to oil ratio, allowing for a softer texture along with better flavor.  These are the loins for the Yellow-fin Tuna. Tuna #1 has a raspberry color to its flesh. This is some real sushi grade Tuna!        


Local Whelks are available today. Whelks have a chewy texture with a flavor that is similar to a clam. They were harvested in Long Island.
