Wild Edibles Newsletter 4-30-2013

Good Morning Chef’s & Buyers!

At the market this morning Grouper, Mahi, Wild Stripe Bass, and 16/20 fresh shrimp weren’t available. It is looking like we will be able to secure Wild Striped Bass, Grouper, and 16/20 fresh shrimp later in the week.





In the house this morning from the market is beautiful fresh squid.










We also have Hake in house today which is a great sub from Cod or Pollock. These fish are weighing around 10lbs today.









Jumbo Black Sea Bass is in the warehouse today and they look beautiful.







Today we have Market Cod in house and they are head on. They are at the most 6-7 lbs each.





We are getting a shipment of Blackfish coming in tonight. We will have Halibut, Tilefish, and Swordfish. Please contact your account representative with any questions you might have.

Good Morning Chefs and Buyers!


Tuna #2 will not be available this weekend. We have plenty of #1 and #2+. Snapper, Black Sea Bass, and Fluke will not be available this weekend as well. Wild Striped Bass and Cod will be tight for tomorrow and possibly not available on Sunday. Please plan accordingly for the weekend.


Blackfish otherwise known as Tautog is available. These fish swim near reefs and rocks feeding on various shellfish using its powerful molars to crush their shells. They are trapped in Massachusetts using cages set along reefs, wrecks, and rocky areas. The Blackfish has dry, white flesh with a delicate flavor.




We are using Fresh Catfish to cut into fillets for the weekend. These are from the James River in Virginia. Catfish is a very common fish to use for many recipes. Catfish taste best when it is broiled or fried.




Black Cod from Alaska is available this weekend. Black Cod is line caught so there is very little by-catch with low environmental impact. Black Cod is healthy being full of Omega-3 Oils, high in polyunsaturated fats making them healthy for your heart. Black Cod with Miso is a great suggestion.



We are running a great special on Sturgeon from Florida into the weekend. Pick some up now before it won’t be available. Halibut from Nova Scotia will be in stock. Day Boat Scallops in both U-10 and 10/20 sizes are in stock as well. We also have some awesome Swordfish caught in New Jersey.

Good Morning Chefs and Buyers!

Tuna #2 isn’t available today. IT WILL NOT BE COMING IN TILL MONDAY. We just want to give you a heads up in advance so that you can create alternative plans.



Wild Striped Bass season is in full swing in Delaware. Wild Striped Bass has a very clean and mild flavor with meat that has a firm texture. Though the value has increased, the quality has not.






Golden Tilefish is available. We acquire ours off the coast of Wilmington, North Carolina. Colorful in appearance; the flavor is mild and sweet from its steady diet of shellfish, squid, and clams.







Soft Shells Crab Season is in swing. Acquire your Jumbo and Whales while the prices continue to creep down. Soft Shell Crab has a nice sweet flavor and is easy to use for almost any seafood recipe in your arsenal.





Sturgeon from Florida is available at a great price. We are offering it as our special for the week. We also were able to acquire Fresh Pike from the Finger Lakes. Halibut from Nova Scotia is going to be plentiful. Lobster Prices are creeping down after the rapid increase we have seen over the last few weeks.

Good Morning Chefs and Buyers!

Tuna # 2 was not available today, sorry for any inconvenience. We will be very tight on Tuna #2 for the week. Supply hasn’t been coming in to the market for us.






Soft Shell Crab season is upon us and the price has come down on them. Jumbos are available. Now is the time to begin picking them up.










Lobster prices have come down. It’s a good time to buy these beauties before Mother’s Day demands increase the price. Our hard shell lobsters come from Maine.








We currently we have Fresh Lump and Jumbo Lump Maryland Crabmeat. Fresh Crabmeat is still limited, but more will arrive as the weather warms up. We suggest ordering a day in advance until more supply becomes available.







West coast Halibut from Alaska is available. They are fatter fish with a bit more yield. They are of the same quality and flavor as its east coast counterpart. East Coast Halibut from Nova Scotia is available as well.

Good Morning Chefs and Buyers!

East Coast Oysters are still scarce. You’ll see more available when May rolls around. By that time the weather warms up, the bays are clear of ice from winter and production becomes a lot easier.



Soft Shell Crab season is beginning. The prices are dropping down for you to start buying them now. Soft Shell Crab is easy to prepare and is full of sweet flavor.






We brought in Local Swordfish from New Jersey. The fish was line caught which is the most environmentally friendly method to catch any fish.







Yellow-fin Tuna #1 looks spectacular today. They came locally from New Jersey as well. The picture above is cuts that our own Tuna Cutter prepared this morning.






Amberjack flew in from Florida this morning. Amberjack are similar in flavor to Mahi, Tilefish, and Mullet. They are extra lean with firm texture and a mild flavor.




We also have plenty of Halibut form Nova Scotia, Mahi from Panama, and we are running a special on Sturgeon from Florida.

Good Morning Chefs and Buyers!



Happy Monday! Our buyer brought in some beautiful fish today. Pictured left is Sturgeon, which is farmed in Florida and is great smoked or pan seared.








Mahi Mahi, one of the most popular fish in the warmer weather is here and is plentiful. An oily fish, it is perfect for grilling or blackening.








We also have Tile fish in from the Carolinas. These fish are usually found in tropical waters of 50-200 meters in depth. Their diet consists of crabs, shrimp, and sea urchins making for a delicious treat.








We also have beautiful East Coast Halibut in from Nova Scotia. Great for grilling, even better with a little fresh horseradish grated on top.





We will have in house tomorrow Soft Shell Crabs from the Gulf, Jumbo Black Sea Bass from Delaware and East Coast Oysters coming in as well.

Good Morning Chefs and Buyers!

Happy Friday! Please be aware for the weekend we will be tight on all sizes of Red Snapper also Rock Shrimp and Farmed Sturgeon. We recommend contacting your representative to find out about availability.


Our buyer has brought in Amberjack from the Carolinas. Amberjacks are voracious predators which feed on squid, fish, and crustaceans. Amberjack is a great for grilling especially with the warm months upon us.








Nantucket Bay Scallops are only going to be around for a few more weeks. I suggest taking advantage of these beauties while you still can.







Striped Bass from Delaware is available for this weekend. Wild Striped Bass has a mild, ocean flavor with firm white meat. They really hold up well to grilling and the skin is perfect to leave on because it gets so crispy when cooked.









We have beautiful Farmed Sturgeon in house from Florida. Sturgeon can be cooked multiple ways, but the two most common are either smoked or pan seared.





We will also have Halibut from Nova Scotia, Mahi Mahi from Panama, and Icelandic Cod.

Good Morning Chefs and Buyers!

The Gulf has experienced some rough weather recently driving up prices on certain products as well. However, we have some amazing seafood that we brought in this morning.

Tuna #2 is not available. We are sorry but a good supply has not arrived in the market. We should have it for the weekend.



Today some beautiful Atlantic Cod came in from Massachusetts. Some of them are monsters and will give you some great yield. The one in the photo left is a 25 pounder.







Nice looking Grouper arrived from the Gulf side of Panama. Grouper is a firm, mild flavored fish that is related to the Bass. The firm meat allows for some great grilling.







Day Boat Halibut arrived from Nova Scotia. Halibut is a mild, sweet flavored flat fish. They feed on mostly crustaceans and small fish. They are caught in one trip out to sea, then brought to shore and shipped here overnight.






Lobster prices are really starting to trickle down finally. Eventually we will see some stability in prices as the weather warms up and more boats go out.

Good Morning Chefs and Buyers!



Soft Shell Crab season is in its early phase. We can acquire the Jumbo, and Whales at the moment. Over the next few weeks smaller sizes will be available.






Lobster Prices are going to begin their slow climb down in pricing. The unusually harsh winter in Northeastern America has made Lobsters difficult to acquire and had brought rapid fluctuations in price.





Wild Striped Bass from Delaware looks beautiful. They are some nice large fish in supply that will give you a great yield. The clarity of their eyes and the redness of their gills is a true testament to their freshness.





Halibut from Nova Scotia is available. We can also acquire Halibut from Alaska as well. There isn’t a difference in taste and quality between the two.





We also have a great selection in stock. We have Golden Tilefish from Florida, Monkfish from Long Island, Tuna and Swordfish from New Jersey, and the Day-boat Scallops look spectacular.

Good Morning Chefs and Buyers!

This time of year is the worst time of year to get East Coast Oysters. When winter starts, oysters go into hibernation, and generally do not awaken until April. The game plan for most oyster suppliers is to harvest as much as they can before winter, and then sell what they can all winter long, usually selling out around Valentine’s Day. From Valentine’s Day through April, Oyster conditions aren’t good and suppliers try to squeak by with whatever they can find until Oyster season start to open with warmer weather.

This year, the long harsh winter in the northeastern region made ice on the oyster beds extra thick, further extending their hibernation. This creates a weak-tasting product with brittle shells, bringing us into the current situation we are dealing with for the past month. Once the weather gets warmer, things will improve. Canadian oyster production is scheduled to start first week of May.




Escolar arrived this morning. The Escolar was line caught in New Jersey.








Size 4-6 pound Farmed Atlantic Salmon is available. They are farmed in Blacks Bay. Nova Scotia.







Atlantic Cod from Iceland is available and looks beautiful.





There will be no Tuna #2 available tomorrow. Tuna #1 and #2+ will be available. They were caught locally in New Jersey. Wild Striped Bass from Delaware is in stock.

Good Morning! Chefs and Buyers,

I hope you all had a great weekend and are having a great start to the week so far.



This morning our buyer brought in beautiful Mahi Mahi from Guatemala. Mahi Mahi is a beautiful fish great for either blackening or grilling especially with the warm weather upon us.






Our buyer also brought in Grouper today as well. Grouper is most often caught by hook and line, and is found in warm water areas like Florida to the Mid-Atlantic and South America. There are several ways to prepare grouper ranging from blackening, roasted whole fish, skewering, etc.







Another beautiful treat that came in tonight as well was Icelandic Cod this fish is just beautiful to look at.






As always we have brought in a good amount of 16/20 gulf shrimp from Florida. Gulf Shrimp is the most consumed shrimp out in the market because you can prepare it in so many different ways. For example it can be breaded, stuffed, broiled, or put on skewers.





Locally caught Octopus came into  our warehouse as well. Although there is not that much available. I would advise that you get in touch with your sales representative to secure the remaining stock. 
Last but not least we will be getting in Razor Clams tonight these are always a special treat for any occasion.
