Wild Edibles Newsletter 3-4-2013

Good Morning Chefs and Buyers!

Our buyers brought some spectacular seafood in this morning. Tuna #2 will be very tight this week and is not looking good for us. We are stocked on Wild Striped Bass, Fluke, Black Sea Bass, and Tuna 1, and 2+.


Halibut from Nova Scotia is available this week. The Halibut that we brought into the warehouse this morning looks clean and beautiful. Halibut was a roasted walnut smell when it is fresh like shown at left.







Farmed King Salmon from Ora King in New Zealand is now available. This Salmon is great for many types of recipes that require it’s use. They have nice bright pink flesh with thick white fat lines.







Day Boat Scallops from New Jersey are available. We have U-10 (Under 10 pieces per pound) and 10/20 (10 – 20 pieces per pound) available. These are dry scallops so they will sear perfectly… or you can use them for any ceviche or crudo that will take advantage of their freshness.





16/20 Fresh Gulf Shrimp is available. They are great for anything. You can eat these right now as is, or serve them in any recipe that would call for Shrimp.
