Wild Edibles Newsletter 3-15-2013

Good Morning Chefs and Buyers!

We’re in for a rough weekend guys! 16/20 Shrimp won’t be available. We sold out of the 16/20 Shrimp this morning. Lobster prices are still climbing and there will be very little available. Grouper still hasn’t come in and Wild Striped Bass is going to be tight.



Yes. That is Live Crayfish. No we are not placing bets on who wins. Crayfish can be prepared in most manners appropriate for lobster and, like lobster, turn bright red when cooked. They're usually eaten with the fingers, and the sweet, succulent meat must be picked or sucked out of the tiny shells.




Frog Legs are available from the Florida Everglades. Frog Legs are easy to cook. All you really have to do is give them a little frying. They taste like young chicks.







Whelks are still available. We have nice stock in house. Razor Clams are also available so pre order them if you have a chance. They will be gone by tomorrow morning.
