Wild Edibles Newsletter 3-20-2013

Good Morning Chefs and Buyers!

Bad news restaurateurs!!! Salmon prices are going to continue to climb. Salmon production has been down in Canada due to disease. The Salmon are not surviving further depleting the stock. Usually there would be some relief from other exports… However Chile is not exporting at all.

The packer who develops the Styrofoam packaging to ship fish overseas has cut off all Salmon producers in Chile. It’s hard to believe that there is only one packer for an entire country. The Salmon farmers of Chile are freezing the Salmon because they cannot export.

This is going to not only create price increases… It is also going to hurt what supplies we have of Salmon now. We are hoping to get a shipment on Friday but be precautious of the current changes and adapt accordingly.

We did bring in a nice supply of seafood this morning. Golden Tilefish came in from the Carolinas. The Golden Tilefish is colorful in appearance, and has sweet and flavorful meat from its steady diet of shellfish.

American Red Snapper looks beautiful this morning as well. These come from Florida. You can see how the red is nice and deep. The meat looks great, gill are nice and red. Our supply of Red Snapper looks really good today.

Boston Mackerel came in for a special today. Boston Mackerel are small roughly 1 pound each. I would compare the size to the Sardines we carry from Portugal. They not only taste great… Boston Mackerel is a really healthy fish with more Omega-3 acids than Salmon. Buy some now before they are gone.

We have plenty of Atlantic Cod available. The price on them is great right now. Also we have Fluke, Black Sea Bass, Mahi-Mahi and Halibut are in stock as well. Contact Wild Edibles for more information.
