Good Morning Chefs and Buyers!



Swordfish looks spectacular this morning. Swordfish is caught locally off the Long Island Shore using the classic hook and line method. The Hook and Line method produces virtually no by-catch and is the most environmentally friendly method of commercial fishing.




Tuna #2 is in very short supply at the market even though Tuna #1 and #2+ is looking good. The Tuna was also caught locally in the Atlantic Ocean using the same methods as the Swordfish. Tuna from local Atlantic waters have a nice, fatty flavor because of their heavy feeding habits which helps the Tuna keep themselves warm in colder water.



Monkfish Tails from Rhode Island look great today as well. The Monk fish has a nice opaque color, with a sweet and mild flavor, and a slightly chewy texture. Monkfish is also commonly known as a “poor man’s lobster.”





We have plenty of Wild Striped Bass form Virginia in stock and the inexpensive price per pound is still available.
