Wild Edibles Newsletter 3-29-2013

Good Morning Chefs and Buyers!

Tuna #2 and Fresh Crab Meat will not be available this weekend. Sorry, we learned recently that it is spawning season for Crabs so they will be very limited in availability. Wild Striped Bass will be tight this weekend as well.

We have brought in some beautiful Golden Tilefish from North Carolina. The Golden Tilefish is very colorful in appearance. It also tastes as great as is looks.

Razor Clams are available tomorrow as well. Razor Clams are responsibly harvested in Maine. The flavor of the meat is sweet with a nice tender consistency.

Nantucket Bay Scallops are almost finished for the year. We will have some of the last shipments available this weekend. Nantucket Bay Scallops have a great sweet flavor, and they are so fresh that you can eat them raw on the spot.

We also have Halibut from Nova Scotia, Jumbo Black Sea Bass from Virginia, 16/20 Fresh Gulf Shrimp and plenty of Red Maine Shrimp is available for this weekend. Contact Wild Edibles for more information.

We will be closed on Easter Sunday this weekend. We wish you a very Happy Easter!

Good Morning Chefs and Buyers!

Great news……it looks like we are in store for a beautiful Holiday Weekend !!! Our buyers have brought in some fantastic seafood to offer to your customers as they celebrate with their friends and family.

Pictured left is magnificent Day Boat Gloucester Cod which are running 10 # and up. For some 400 years commercial fishing has sustained this Massachusetts community where hundreds of seafood processors, wholesalers, and distributors make a living off the waterfront.

Razor Clams have just arrived in our warehouse. They would make for a great Holiday appetizer selection. These delicacies are great baked, fried or grilled.

Wow….these Sweet Maine Shrimp look stunning this morning!!! This will be “last call” for these chef favorites as the season has ended. We have a limited supply, so call our office today to reserve your portion.

We have a nice selection of Halibut from Canada that would make for a wonderful seafood special for your weekend menus.

Good Morning Chefs and Buyers!

Halibut prices have come down today. We acquire our Halibut from Nova Scotia, Canada. Halibut has a great flavor to it. Its meat is mild and sweet with a firm texture that you would expect from a flatfish.

Jumbo Black Sea Bass looks spectacular this morning. The Black Sea Bass has a mild flavor with delicate meat. They are smaller than Wild Striped Bass, averaging 1 to 3 pounds when they arrive.

Day Boat Cod is available. Day Boat Cod is when a boat goes out for the day, makes its catch and returns. In this case it would be for Cod. They were caught not far away, off the shores of Massachusetts. Cod has a classic, mild, oceanic flavor with flakey meat.

Day Boat Scallops from New Jersey are available today as well. They smell fresh and clean. They sear perfectly for any dish. The quality of our hand selected Scallops are great.

We have Wild Striped Bass from Virginia available at a great price. Silver John Dory from Long Island is here this morning. We received shipments from Greece for Bronzini and Dorade today. Contact Wild Edibles for more information.

Wild Edibles Newsletter 3-26-2013

Good Morning Chefs and Buyers!

Swordfish looks spectacular this morning. Swordfish is caught locally off the Long Island Shore using the classic hook and line method. The Hook and Line method produces virtually no by-catch and is the most environmentally friendly method of commercial fishing.

Tuna #2 is in very short supply at the market even though Tuna #1 and #2+ is looking good. The Tuna was also caught locally in the Atlantic Ocean using the same methods as the Swordfish. Tuna from local Atlantic waters have a nice, fatty flavor because of their heavy feeding habits which helps the Tuna keep themselves warm in colder water.

Monkfish Tails from Rhode Island look great today as well. The Monk fish has a nice opaque color, with a sweet and mild flavor, and a slightly chewy texture. Monkfish is also commonly known as a “poor man’s lobster.”

We have plenty of Wild Striped Bass form Virginia in stock and the inexpensive price per pound is still available.

Also in stock are Black Sea Bass from Virginia, Halibut from Nova Scotia, Sturgeon from Florida, and Local Whelks are available. Contact Wild Edibles for more information.

Good Morning Chefs and Buyers!

We brought in a nice supply of seafood from the market this morning. Wild Striped Bass from Virginia is available at a great price. We also have Black Sea Bass caught in Virginia as well.

Swordfish is in stock and looks spectacular. The Swordfish we acquire is line caught locally off the shores of New England.

There is plenty of Yellow-fin Tuna #1 available today. Yellow-fin Tuna #1 is line caught locally. The colder waters of the Atlantic Ocean give the Tuna a better fat to oil ratio, allowing for a softer texture along with better flavor.  These are the loins for the Yellow-fin Tuna. Tuna #1 has a raspberry color to its flesh. This is some real sushi grade Tuna!

Local Whelks are available today. Whelks have a chewy texture with a flavor that is similar to a clam. They were harvested in Long Island.

Contact Wild Edibles for more information about availability and what we have in stock for the week.

Wild Edibles Newsletter 3-21-2013

Good Morning Chefs and Buyers!

Even though the weather doesn’t reflect it yet… Spring is finally here!!!

Lobster prices are continuing to climb as supply continues to decrease. There is virtually no production coming from Maine or Canada. The sellers have a big advantage here because they can quote any price they want. You may want to consider making changes on your menus for the next few weeks.

East Coast oyster production is also slow. Bays are still frozen and high tides are making it hard for oyster farmers to harvest new product. Shipments of oysters will continue to be slow till the weather warms up.

We have some nice selection of seafood that came into our warehouse this morning. Fresh 16/20 Gulf Coast Shrimp arrived. Channel Catfish from Virginia is in stock. Sardines from Portugal are here. Long Island Blowfish Tails are available. Grouper from Florida is arriving tomorrow after disappearing for the last few weeks. Atlantic Cod from Massachusetts is steadily coming in and looks beautiful.

This is the last weekend you will see Wild Striped Bass at such a great price. Wild Striped Bass season in Virginia is closing this week and supply will come in from Delaware.

The Swordfish that arrived today looks spectacular. Long lined in local Atlantic waters, Swordfish has a buttery flavor with nice firm white meat. This is some A+ Swordfish in terms of quality.

Wild Edibles Newsletter 3-20-2013

Good Morning Chefs and Buyers!

Bad news restaurateurs!!! Salmon prices are going to continue to climb. Salmon production has been down in Canada due to disease. The Salmon are not surviving further depleting the stock. Usually there would be some relief from other exports… However Chile is not exporting at all.

The packer who develops the Styrofoam packaging to ship fish overseas has cut off all Salmon producers in Chile. It’s hard to believe that there is only one packer for an entire country. The Salmon farmers of Chile are freezing the Salmon because they cannot export.

This is going to not only create price increases… It is also going to hurt what supplies we have of Salmon now. We are hoping to get a shipment on Friday but be precautious of the current changes and adapt accordingly.

We did bring in a nice supply of seafood this morning. Golden Tilefish came in from the Carolinas. The Golden Tilefish is colorful in appearance, and has sweet and flavorful meat from its steady diet of shellfish.

American Red Snapper looks beautiful this morning as well. These come from Florida. You can see how the red is nice and deep. The meat looks great, gill are nice and red. Our supply of Red Snapper looks really good today.

Boston Mackerel came in for a special today. Boston Mackerel are small roughly 1 pound each. I would compare the size to the Sardines we carry from Portugal. They not only taste great… Boston Mackerel is a really healthy fish with more Omega-3 acids than Salmon. Buy some now before they are gone.

We have plenty of Atlantic Cod available. The price on them is great right now. Also we have Fluke, Black Sea Bass, Mahi-Mahi and Halibut are in stock as well. Contact Wild Edibles for more information.

Wild Edibles Newsletter 3-19-2013

Good Morning Chefs and Buyers!

Lobster prices are still unstable due to lack of supply. Maine is still not producing. The recent weather patterns have dictated an uptick in pricing. Pricing will begin to stabilize and decrease in Early to Mid-April.

East Coast Oyster production has been down significantly this week. Most oysters in the North East such as in New Brunswick have been frozen in the bay making them impossible to acquire. Also the recent storm has delayed many shipments.

Fortunately Cod and Wild Striped Bass have come down in price recently because of the amount of stock that has come into the market recently.

Staked Atlantic Cod came in from Massachusetts. The Cod we received have outstanding quality. The meat is nice and opaque, and the size is also great for portioning.

Wild Striped Bass is great for its price right now. The quality that has come in has been above par. The Wild Striped Bass are arriving from Virginia. We recommend taking advantage of the price now before the season closes within the state.

We also received some great looking Black Sea Bass this morning. They are beautiful and large at 2+ pounds. Black Sea Bass has a wonderful flavor to its meat and the skin is nice and crispy after it is cooked.

Wild Edibles Newsletter 3-18-2013

Good Morning Chefs and Buyers!

Bad news restaurateurs… Lobster prices are going to continue to climb until Early April when prices will steeply drop when the weather warms up creating more supply. There is virtually no Lobster coming from Maine and Canada is not able to keep up with demand. Unfortunately this is the time of year when the Lobster fishermen are able to quote prices that they desire.

Salmon is also going to see a price increase. Pens aren’t at full capacity after lost supply due to their demise in the cold weather. This will limit the amount being released to market as we wait for the stocks to replenish.

We are also going to see a decrease in production from Scallops as harvesters are allowing the stocks to replenish itself for the future. However, we brought in some great Day Boat Scallops from New Jersey. These are less than 12 hours removed from the ocean so they will be extremely fresh today.

We have some nice seafood overnighted to us from Florida this morning. Fresh 16/20 Gulf Shrimp looks stunning. Farmed Sturgeon is available. Sturgeon is a nice, meaty fish that you would want to grill or use for any kebob recipe.  Fresh Frog Legs are also available. They are tender and succulent!!!

The recent weather in the North East has created some supply issues with seafood in general. Shellfish, such as oysters and clams, have been affected. We were lucky to have Razor Clams come in again this week which made us pretty happy. These are harvested responsibly like all shellfish and they are great to use for any type of cuisine. Whelks are available as well.

Wild Edibles Newsletter 3-15-2013

Good Morning Chefs and Buyers!

We’re in for a rough weekend guys! 16/20 Shrimp won’t be available. We sold out of the 16/20 Shrimp this morning. Lobster prices are still climbing and there will be very little available. Grouper still hasn’t come in and Wild Striped Bass is going to be tight.

Yes. That is Live Crayfish. No we are not placing bets on who wins. Crayfish can be prepared in most manners appropriate for lobster and, like lobster, turn bright red when cooked. They're usually eaten with the fingers, and the sweet, succulent meat must be picked or sucked out of the tiny shells.

Frog Legs are available from the Florida Everglades. Frog Legs are easy to cook. All you really have to do is give them a little frying. They taste like young chicks.

Whelks are still available. We have nice stock in house. Razor Clams are also available so pre order them if you have a chance. They will be gone by tomorrow morning.

Mahi Mahi is plentiful this week if you’re looking for a good white fish to grill this weekend. Contact Wild Edibles for more information.
