4.2.12

Good Morning Chefs and Buyers,

It's a new week and we brought in some great items for you to enjoy.  Local Tuna looks amazing this morning.  The boats that catch these fish start in North Carolina and work their way up to us.  They always give us great fish.  Blowfish Tails from Long Island are incredibly fresh.  Steamers came in from Long Island this morning too.  Local Bluefish look nice at 4 pounds each.  Soft-Shell Crabs are crawling out of the box today.  Jumbos look to be all that is available.

We have Farmed Sturgeon from Florida, as well as Wild Sturgeon from the Columbia River.  The Wild Sturgeon is quite large and the farmed fish are about 10 to 12 pounds each.  16/20 Fresh Gulf Shrimp are a can't miss item today.  Chile is sending us our Turbot tonight.  They will be both 2/3 and 3/4 sizes.  Louisiana Lump and Jumbo Lump Crabmeat couldn't be fresher.  This is great because we can't seem to find any All-Leg.

Wild Steelhead from Alaska made an appearance today.  They are 8 to 10 pounds and very fresh.  Wild Striped Bass and Cod are up in price.  Please take note of the changes on your price list.  We are hoping for some relief later in the week.  Boston is sending us 10/20 and U/10 Scallops tonight.  East and West Coast Halibut are available.  Please specify which you prefer.
