4.26.12

Good Morning Chefs and Buyers,

The weekend is right around the corner.  Make sure you are stocked up on all the great fresh seafood we have to offer today.  Local Tuna and Swordfish arrived this morning.  They come to us from boats that fish from North Carolina to New Jersey.  This ensures we only get the freshest available fish.  Though all sizes of Soft-Shell Crabs are around, Jumbos are definitely the way to go.  They are everywhere and the quality is more consistent then the smaller sizes right now.  Wild Striped Bass from Delaware is still readily available and the price is holding nicely.

Trap Squid from Massachusetts couldn't be fresher today.  Unfortunately, the bad weather earlier in the week means no Uni or Razor Clams until at least Monday.  Dayboat Canadian East Coast Halibut are incredibly fresh this morning.  They range in size from 10 to 50 pounds.  Scallops came in from New Jersey.  Unfortunately, it looks like U/10 Scallops are going to be very tight this weekend.

Ecuador sent us lovely Mahi Mahi.  Each fish is 5 to 15 pounds with the head off and already gutted.  Fresh Sepia arrived from Portugal today.  Florida sent us great stuff overnight.  Red Grouper are 5 pounds and up.  16/20 Fresh Gulf Shrimp are perfect as always.  Lump and Jumbo Lump Crabmeat from Louisiana is nice and fresh today too.
