Good Morning Chefs and Buyers,
 
It's time to get those weekend menus in order.  We have fantastic items available for today with more great stuff coming in for the weekend.  Jumbo Soft-Shell Crabs are available and the price is set to drop a bit.  It looks like Jumbos will be the only size available.  All grades of Local Tuna arrived this morning.  We are unsure if we will be seeing any Swordfish for the next few days.  There is a quality issue at the moment.  U/10 and 10/20 Scallops from Cape May look wonderful this morning.  Fresh Local Octopus showed up again.  They are about 2 pounds each.  Black Sea Bass is a mystery right now.  It might show up, it might not.  Please plan accordingly.
 
Our delivery of Fresh 16/20 Gulf Shrimp was delayed and will be coming tonight.  Lump and Jumbo Lump Crabmeat from Louisiana are very fresh.  All-Leg Crabmeat is in from Maine as well.  East Coast Canadian Oysters are a problem this weekend.  The waters have been freezing and they are unable to harvest.
 
Escolar from Ecuador looks terrific.  The fish is a monster, but we will cut you whatever size you need.  Mahi Mahi from Guatemala are coming in with the head off and weigh between 10 ad 15 pounds each.
 
Grey Tilefish from North Carolina looks like a can't miss choice for a special.  We brought in some Wild Sturgeon from the Columbia River that are about 30 pounds each.  East Coast Dayboat Halibut is set to arrive tonight along with more West Coast fish.
 
On this day in 2006, singer, performer, open shirt wearer Tom Jones was knighted by the Queen of England.  Rumor has it she threw her panties on stage at his concert later that evening.  Sir Tom Jones?  That sounds right.
