4.10.12

Good Morning Chefs and Buyers,

The market and our direct suppliers are back in full swing.  The only main item that wasn't available was Black Sea Bass.  We got in some beautiful Local Swordfish this morning.  These boats ship directly to us and they fish from North Carolina to New Jersey.  The Pups and Markers they send us are always amazing.  Wild Striped Bass is back.  The 6 to 8 and 15+ fish from Delaware look great.  Local Dory is available today too.  They are bigger than last time at 3 to 5 pounds each.

Soft-Shell Crabs are readily available.  The Jumbos are in from Florida, while the Hotels and Primes are coming to us from South Carolina.  Fresh 16/20 Gulf Shrimp are super fresh as always.  Red Grouper from Florida is a can't miss today.  They are 5 to 10 pounds each.  Beautiful Florida Red Snappers have matching bright red gills.

Canadian Oysters are back in gear.  Everything appears to be thawed out and we aren't expecting any problems.  More Razor Clams are set to arrive tonight from Maine.  We recommend you stock up on them.  We aren't expecting to see any as we get closer to the weekend.

Gorgeous 10 to 50 pound East Coast Canadian Halibut came in this morning.  These Dayboat fish are always lovely.  We are trying out a new source for Turbot.  The fish will be 3/4, but instead of Chile, they will be coming in from Spain.  We are hoping this improves availability and consistency.

"Self-praise is for losers.  Be a winner.  Stand for something.  Always have class, and be humble"  -John Madden
Today is John Madden's 76th birthday.  This is the only intelligible quote I could find.

Have a great day.
