4.11.12

Good Morning Chefs and Buyers,

We have some lovely items available today and more great stuff is coming in tonight.  Swordfish looks absolutely gorgeous this morning.  The fish came in from Barnegat Bay, NJ.  Our friends in Barnegat Bay also sent us more U/10 and 10/20 Scallops.  Big Bluefish made an appearance this morning.  They are 5 to 7 pounds.  Black Sea Bass is finally back after pulling a disappearing act the last few days.  Local Dory looks like a nice idea for a special.  They are 3 to 5 pounds each.  We brought in a small amount of Sea Trout from Massachusetts that are about 4 to 6 pounds per fish.

Super Bloody, Local Monkfish tails are here.  Each tail is 5 pounds and up.  Tuna is getting tight and we expect the price to rise.  Albacore came in from North Carolina today.  North Carolina also sent us 7 to 12 pound Amberjack.

It looks like Halibut is going to be tougher to find as the week goes along.  Beautiful farmed Sturgeon from Florida looks terrific.  Razor Clams are going to be unavailable for a while.  The waters are getting too high to harvest them.  Fresh 16/20 Gulf Shrimp are perfect as usual.  Tomorrow is our weekly delivery of Sardines from Portugal.  We are also bringing in fresh Sepia from the same supplier.
