4.17.12

Good Morning Chefs and Buyers,

The weather continues to be lovely.  This should keep filling up those seats.  Wonderful local items arrived this morning.  We have the first Blackfish we have seen in months available today.  They are 3 to 5 pounds.  We don't have much, so I would order them in advance.  Local 4 to 6 pound Sea Trout looks like a great idea for a special.  Local Dory is still showing up.  The fish are 3 to 5 pounds.  Enormous Bluefish came in this morning.  The fish are 8 to 12 pounds.

Amberjack from North Carolina are super fresh.  They average about 5 pounds.  North Carolina also sent us more lovely Albacore.  Florida came through with Cobia today.  The fish are wild and average around 25 pounds each.  We will cut you whatever size you need though.  Soft-Shell Crabs are still readily available.  Please order them in advance as we are trying  to not keep extra crabs around to ensure quality.  Louisiana Lump and Jumbo Lump Crabmeat is incredibly fresh today.  We also got a nice surprise from New Zealand.  Pink Snappers are here and are weighing in at 2 to 4 pounds each.

Razor Clams from Maine keep trickling in.  We aren't sure how much longer they will be available.  Jumbo Black Sea Bass is back.  They are 3 to 5 pounds and are coming to us from Boston.  Stunningly fresh Dayboat Halibut is in from Canada.  They are anywhere from 10 to 50 pounds each.  Canada also sent us beautiful 2 to 4 pound Arctic Char.  Icelandic Dayboat Cod is set to arrive tonight.  They are always flawless fish and weigh 8 to 12 pounds.  This should give us some relief on pricing.
