4.5.12

Good Morning Chefs and Buyers,
 
It's time to get your menu ready for the holiday weekend.  Stock those walk-ins because the nice weather is sure to fill up the seats.  Local Tuna of all grades look wonderful today.  U/10 and 10/20 Scallops are out of New Jersey and Boston.  Virginia has closed it's Wild Striped Bass season.  All of our fish is now coming in from Delaware.  Dayboat Monkfish Tails look delicious and are coming out of Boston.
 
2 pound Triggerfish from Florida looks like a nice option for a special.  We don't have much, so please order it ahead of time.  Pompano is weighing in at 1 to 2 pounds.  Florida also sent us lovely Red Grouper that are 5 to 10 pounds each.  2 to 4 and 4 to 8 pound Red Snappers have bright red gills and are also from Florida.
 
Soft-Shell Crab season appears to be in full swing.  Aside from the Jumbos we've been seeing for a few weeks, we also have Primes and Hotels available.  Calico Bay Scallops are available from North Carolina.  We haven't seen these beauties in years.  Whitebait is coming in pretty regularly now that the Great Lakes are thawed out. 
 
West Coast Halibut looks beautiful.  The fish are between 10 and 40 pounds each.  It looks like West Coast Oysters are going to be a problem.  There have been problems with closures and flooding.  At least the Mets are still tied for 1st place.
