6.1.11

Good Morning Chefs and Buyers,

We have some wonderful items for you today.  Incredibly fresh Fluke is available.  It is very limited, so please call and pre-order what you need.  Local Mako Shark is here.  The quality and price are excellent.  More is available tomorrow if needed.  Wild Ivory King Salmon arrived overnight and looks amazing.  The white flesh looks to have a great texture and they are about 15 pounds each.

Imported Hiramasa from Australia arrived this morning.  They come from the "Great Southern Ocean's" cool, pristine waters.  They are a finfish with a firm, white flesh.  Gorgeous Golden Corvina from Panama is here.  The fish look terrific and are coming in between 5 and 7 pounds.  We will be getting Imported Sardines from Portugal tonight.  Make sure you stock up.  These little treats are only available late in the week.

The price of Jumbo Black Seabass continues to drop.  The quality remains excellent and should continue to stay that way.  Generally found in reefs, these fish primarily eat Shrimp, Crabs and other Mollusks.  This diet contributes to the intricately flavored sweet, white meat.  If you are interested in a whole loin of #2 Tuna, we are happy to offer it to you at $8 per pound.

"I honestly think it is better to be a failure at something you love than to be a success at something you hate."
-George Burns

Have a great day.
