Good Morning Chefs and Buyers,
 
The weather is beautiful, and it's Thursday.  Time to start thinking about what you'll need for the busy weekend ahead.  Wild King Salmon and Ivory King Salmon are both available.  The Wild King is troll caught and coming to us with the head off and gutted.  The Ivory King is coming in with the head on.  They are both from Alaska and couldn't be nicer.  Don't be left out on these.  We have Pike from Lake Erie in house today.  They are coming in between 3 and 5 pounds and look great.  Local Tuna came in this morning as well.  The quality is what you've come to expect from us, amazing. 
 
Large and Jumbo Black Seabass are still available and the price is holding lower than expected.  New England isn't messing around today.  Gorgeous Dayboat Monkfish and Dayboat Market Cod arrived this morning.  The Monkfish is ranging from 4 to 8 pounds.  The Cod are a bit on the small side, but the fish look super fresh.  Gorgeous Whelks, Periwinkles and Steamers also arrived today from Maine.  They are sure to make a great special. 
 
Beautiful Mahi Mahi from Guatemala arrived overnight.  They are stunningly fresh.  You want Hiramasa?  We've got your Hiramasa.  Fantastic Imported Hiramasa from Australia is here.  We also have the Local Hiramasa (Yellowtail) that so many of you are in love with.  It looks like Fluke prices are starting to return to normal and the quality is excellent.
 
Unfortunately, it looks like Uni isn't going to be available tomorrow.  Please plan accordingly.  Live 10/20 Scallops in the Shell from Montauk are available for tomorrow.  Please pre-order this item to ensure we get them tonight.  Canada is apparently afraid of some bad weather because East Coast Oyster production has come to a grinding halt.  This is strange because, well, it's Canada.  I think there is a verse in their National Anthem about loving lousy weather.  Don't worry, we are going to have plenty of West Coast Oysters to hold us over.
