Good Morning Chefs and Buyers,
 
Always start with the bad news, right?  We weren't able to get any #2+ Tuna for the weekend.  The good news you ask?  You'll get #1 Tuna at 2+ prices!!!  The fish look beautiful and will be perfect for the holiday weekend.  Amazingly fresh Local Swordfish came in again and looks great.  Monkfish that was still squirming when cut from Massachusetts arrived this morning.  We have them available in all sizes.  We managed to get our hands on some Wild Striped Bass from Rhode Island.  Please pre-order or leave a substitute for them.  We don't have much available and we don't want you to get stuck with nothing.  Stellar Soft-Shell Crabs are in today with more coming in tomorrow.  The quality is exceptional.
 
Gorgeous Guatemalan Escolar came in again overnight.  Their freshness can't be beat.  We have some fantastic items from Florida today.  Red Grouper with bright red gills to match and fantastic Golden Tilefish.  The Grouper are averaging between 5 and 10 pounds while the Tilefish are coming in all the way from 5 to 18 pounds.
 
Wild Copper River King Salmon from Alaska keeps arriving fresher and fresher as the season goes along.  The fish look terrific and are highly sustainable.  More East Coast Halibut is here at the same great quality we've come to expect.  The fish are ranging between 10 and 30 pounds.  The price of Large and Jumbo Black Seabass has come down a bit and the fish look great.  With Bluepoint Oysters unavailable, we stocked up on extra Pine Island Oysters which should make a perfect substitute.
 
Imported Sardines from Portugal are in with their usual flawless quality.  We have a new product we want to tell you a little about.  It is called "Naked" Lobster.  It is a 1.25 pound Lobster that has been vacuumed out of its shell and kept intact.  What you are left with is 6.5 ounces of whole, raw Lobster meat.  We are getting them shipped here from Brazil.  They come in frozen to ensure their freshness.  Please call if you have any questions about this exciting new item.
