Good Morning Chefs and Buyers,
 
Number 1 Male Blue Claw Crabs from Maryland are here!!!  They are the state crustacean of Maryland.  I'm not kidding.  They take Crabs so seriously down there that they have gotten together and determined which crab best represents their state.  Blue Claws are native to the Western Atlantic Ocean from Nova Scotia to Argentina.  They are omnivorous and will eat pretty much anything.  They can grow up to 9 inches wide.  The blue claws are caused by pigmentation in the shell.  Once cooked however, they turn a reddish orange color.  We are selling these beauties by the bushel.  Please contact us if you have any questions about these wonderful treats.
 
Dayboat U/10 Scallops from Barnegat Bay arrived overnight.  They are incredibly fresh.  Wild Sockeye Salmon from the Copper River and Wild King Salmon from Alaska are both available.  They are so fresh they look like they were swimming last night.  After the terrible weather the Northeast had last week, we are lucky that Canadian East Coast Oyster production is still going strong.
 
Florida is still coming up big for us this week with more beautiful Amberjack.  We are also expecting to receive more Florida Red Grouper overnight.  The quality has been terrific.  I expect the same great fish tomorrow.
 
We are well stocked on 800/1000 gram Branzini.  This specific size isn't consistently available.  Head off Corvina from Panama came in this morning.  They are averaging 7 to 9 pounds.  They look really fresh and without the heads, they should produce a great yield.  We are getting 3/4 Chilean Turbot tonight as well.  These are always great quality when we are lucky enough to have them here.
