6/21/11

Good Morning Chefs and Buyers,

Today is the first day of summer.  We all know what that means.  It is about to get busy.  Luckily, we are well stocked on all of your customer's favorite seafood.  We have some wonderful Local items today.  We have Local Mako Shark in house.  The firm flesh and great coloring make this a great special.  We have more of the great Local Tuna and Swordfish.  The quality of these fish is unmatched.

We have fantastic Jumbo Fluke available from Boston.  We also got in some more of the super fresh Blackfish from South Carolina that so many of you seem to love.  Blackfish migrate from Georgia all the way to Nova Scotia.  They tend to live near wrecks, rocks, or other bottom structures such as wrecks.  They have black rubbery lips and extremely powerful jaws.  With their molar like back teeth they crush the mollusks and crustaceans which make up their primary diet.

Florida Red Snapper are continuing to come in daily.  We have them available in all sizes and the quality is stunning.  We also have East Coast Halibut today.  East Coast Halibut is primarily found on the continental shelf.  These gorgeous fish are coming to us from Canada.  Sockeye Salmon from Alaska arrived overnight.  With their superior flesh, color and consistency; they are among the most sought after salmon on earth.  We also have incredibly fresh Wild King Salmon from Alaska.  The quality of these fish is terrific.  They have bright red gills and smell perfect.

"Every day I get up and look through the Forbes list of the richest people in America. If I'm not there, I go to work." - Robert Orden
