Good Morning Chefs and Buyers,
 
Live Scallops in the Shell are here.  They are about a 10/20 size.  That is normally good news.  But here at Wild Edibles, we don't settle for good.  These beauties have gorgeous Roe Sacks in them.  The females have Red Roe and the males have White.  The Roe Sack is perfect this time of year.  They are coming to us directly from Montauk, L.I.  We also got in some super fresh Blackfish from Boston.  They are running between 3 and 5 pounds and will make a great special.  We also have great Tuna and East Coast Halibut in house.  The consistency and freshness of both can't be beat.
 
Very fresh Florida Sturgeon is here.  We also got in some Wreckfish from South Carolina.  The meat is similar to a Grouper and they tip the scales around 30 pounds.  Florida Red Grouper keeps coming in and looks great as well. 
 
Chilean Turbot is expected to arrive tonight.  These delicious fish are coming in between 3 and 5 pounds.  Hiramasa from Australia is also expected to arrive overnight and we can expect the same great quality we've come to enjoy.
 
My buyer tells me that Soft-Shell Crab season is gearing up into full production.  Availability of all sizes should improve and prices have dropped a little and should continue to fall as they catch larger numbers.  Farmed Atlantic Salmon isn't being produced at it's normal rate.  Availability may become difficult and prices may rise a bit.  Maine and All Leg Crabmeat is also not guaranteed to come in everyday.  We are working hard to find a steady supply for you.
