5/18/11

Good Morning Chefs and Buyers,

New England's fishermen braved the lousy weather and really came through with some beautiful items today.  Incredibly fresh, monster Monkfish Tails came in this morning from Boston.  They are bloody and smell great.  Great looking Gloucester Cod also arrived this morning and couldn't be fresher.  We also got in some more Razor Clams from Maine.  They look delicious and will make a great special.

Amazing Golden Tilefish from Barnegat Bay, N.J. came in this morning.  They are about 10 to 12 pounds each.  Super fresh and large Farmed Striped Bass arrived this morning.  We have great Atlantic Sea Bream (a.k.a. Jumbo Porgies) in this morning.  They are incredibly fresh, local, and the price is right.

Jumbo Black Seabass seems to be returning to normal availability.  The quality is great and should stay that way.  We tracked down some great Tuna for you.  It wasn't easy, but our buyers found some.  The fish look terrific.  West Coast Halibut is scheduled to arrive tonight from Alaska.  The quality has been great lately.  I'd expect the same thing for tomorrow.  We have more Blackfish from South Carolina here today.  They look amazingly fresh with bright red gills.
