Wild Edibles Newsletter 4-4-2013

Good Morning Chefs and Buyers!

We are beginning to see some Wild Salmon come to the market early. We are able to acquire Wild King Salmon from Alaska. They are troll caught before they enter back into fresh waters to breed. They came gutted with their head on.


Blowfish are taking over the crab traps! So we brought in some Blowfish Tails this morning. Blowfish Tails have a taste very similar to a chicken wing and can be cooked using the same methods. These were caught locally in New York and are available to order now.






Sheepsheads from local New York waters are available today. The Sheepshead feeds in rocky areas searching for shrimp, shellfish and other crustaceans. This fish has a wonderful flavor, much like crab or lobster. Good methods for cooking Sheepshead include frying, sautéing, pan broiling, grilling and baking.




We brought in Scallops, both U-10 and 10/20 from Massachusetts, Jumbo Black Sea Bass came in from North Carolina, Wild Striped Bass from Delaware, and King Mackerel from Virginia is available.



Mahi Mahi is going to be unavailable for the week. We have frozen as a substitute. Fresh Crab Meat is unavailable. Contact Wild Edibles for more information.
