Wild Edibles Newsletter 4-11-2013

Good Morning Chefs and Buyers!

We brought in some spectacular seafood for you today. Shipments of Red Snapper, Grouper, and Sardines came in; along with some specialties we picked up at the market.




Red Snapper finally arrived. We were out of stock for some time while boats were dry docked. They are in pristine condition.







We received Grouper this morning from Florida. The flesh is lean and firm; the skin is strongly flavored and should be removed before cooking.







Day-Boat Halibut from the Georges Bank is available this weekend. These boats go out, catch their fish and return home in one day. The catch arrives overnight to the market.






Boston Mackerel from Massachusetts are in stock. These are by-catch of Spanish Mackerel. Boston Mackerel is small and have a similar flavor to Mackerel.




We also have supplies of Wild Striped Bass and Black Sea Bass from Delaware, Golden Tilefish from North Carolina, and Local caught Tuna and Swordfish from New Jersey.
