Wild Edibles Newsletter 4-12-2013

Good Morning Chefs and Buyers!

Happy Friday! Lobster will be tight this weekend so order carefully. We recommend contacting your representative to find out about availability. There is plenty of spectacular seafood available this weekend. We are running specials on Sheepshead.

Wild King Salmon is in from Alaska. This is the early part of Wild Salmon Season and these are some of the first fish to enter the market. The flavor is phenomenal.

Striped Bass from Delaware is available for this weekend. Wild Striped Bass has a mild, ocean flavor with firm white meat. They really hold up well to grilling and the skin is perfect to leave on because it gets so crispy when cooked.

Whelks from Long Island are available. These sea snails are delicious. Whelks are fairly easy to coax out of their shells after either boiling or freezing. The flesh is mildly chewy and has good flavor.

We brought in Local John Dory, Large Red Snappers from Florida, Jumbo Black Sea Bass, Strugeon from Florida, and Boston Mackerel are still available.

Contact Wild Edibles for more information.
