Wild Edibles Newsletter 7-17-2013

Good Morning Chefs and Buyers,

Opah Selling Strong Across the Board, Limited time only with Special Price. Long line Tuna fishermen snag these beauties from time to time during their short trips in the deep waters of the South Pacific making them a wonderful special to offer this week. Before Opah became commercially viable, Opah was thought of as a good luck sign by fishermen and given away to friends as a way to pass the good fortune along.

Today we have Black Fish from Long Island. Black fish also known by its Native American name Tautog is found from Nova Scotia to South Carolina. They prefer Structured Habitat and are frequently found near piers. Black Fish have a relatively firm white meat, which makes it ideal for a variety of preparation methods including fish stews and chowders.

We have Wonderful 6-8lb Snapper from Florida. Red Snapper is lean and moist, with a sweet, mild but distinct flavor, the texture of snapper ranges from soft to firm- it is the firmer fish that are perfect for grilling. Found worldwide, snapper is among the best fish to eat.

And finally, visually stunning Baby Octopus. Either as an appetizer or main course, grilled baby octopus is a stunning meal that will please both the eyes and the palate. Has a delicate that’s slightly sweet and similar to that of a scallop.
