Good Morning Chefs and Buyers,

Opah racks landed at J.F.K this morning. Long line Tuna fishermen snag these beauties from time to time during their short trips in the deep waters of the South Pacific making them a wonderful special to offer this week. Before Opah became commercially viable, Opah was thought of as a good luck sign by fishermen and given away to friends as a way to pass the good fortune along.





Beautiful Sockeye Salmon, richly textured and highly flavorful, Sockeyes are the Second fattiest and they have the added benefit of having the firmest texture of all Pacific Salmon.







Also in the house today we have Norwegian Cod, Which has been an important economic food group since the Viking period around 800 A.D Norwegian Cod is a firm textured fish with large flakes and has a mild sweet taste.




We also have beautiful Mahi-Mahi in the house. Mahi-mahi also known as Dolphin fish is a surface dwelling ray-finned fish found in off-shore temperate, tropical and subtropical waters worldwide. Mahi is a lean fairly firmed meat fish with a sweet and mild to moderate flavor. Mahi-Mahi means very strong in Hawaiian.
