Wild Edibles Newsletter 3-27-2013

Good Morning Chefs and Buyers!

Halibut prices have come down today. We acquire our Halibut from Nova Scotia, Canada. Halibut has a great flavor to it. Its meat is mild and sweet with a firm texture that you would expect from a flatfish.

Jumbo Black Sea Bass looks spectacular this morning. The Black Sea Bass has a mild flavor with delicate meat. They are smaller than Wild Striped Bass, averaging 1 to 3 pounds when they arrive.

Day Boat Cod is available. Day Boat Cod is when a boat goes out for the day, makes its catch and returns. In this case it would be for Cod. They were caught not far away, off the shores of Massachusetts. Cod has a classic, mild, oceanic flavor with flakey meat.

Day Boat Scallops from New Jersey are available today as well. They smell fresh and clean. They sear perfectly for any dish. The quality of our hand selected Scallops are great.

We have Wild Striped Bass from Virginia available at a great price. Silver John Dory from Long Island is here this morning. We received shipments from Greece for Bronzini and Dorade today. Contact Wild Edibles for more information.
