Good Morning Chefs and Buyers!

Lobster prices are sitting where they are for the time being. Farmed Salmon prices will climb because of lost stock over the past week. However there are some spectacular products to present today.



Farmed Steelhead Trout from British Columbia is available. Steelhead Trout is so much like Salmon in color, taste, and texture. In a blind taste test nobody would be able to differentiate between the two.







Fresh batches of Halibut from Nova Scotia, Canada has arrived. Halibut has a mild, sweet flavor with a delicate texture. When it arrives fresh, Halibut has a roasted, nutty smell to it.







Whelks are available today. These were harvested off Long Island. Whelks are used in a variety of ways including frying, steaming, and as an addition to pasta.
