Wild Edibles Newsletter 3-14-2013

Good Morning Chefs and Buyers!

Our buyer hit the jackpot with some Pumpkin Swordfish this morning! A Swordfish that feeds on a steady diet of Red Shrimp will get an orange tint to its meat making it a Pumpkin Swordfish. It has a sweeter flavor because of its diet. We posted another photo at right. This is a cut of the loin.

Escolar is also available. Some consider it “White Tuna”. It is line caught locally, and has very white, opaque flesh with a creamy, buttery flavor.

We finally received Razor Clams this week. There has been a shortage of these. It feels great that some have finally been harvested. We will have plenty tomorrow to cover your order.

We received Sardines today. Also in are beautiful Mahi Mahi from Panama, Halibut from Nova Scotia, Wild Striped Bass caught locally, and more Local John Dory. Contact Wild Edibles to find out what else is in stock at our warehouse.
