Good Morning Chefs and Buyers,
 
It's back to the grind after the holiday.  We got lucky this morning.  Normally after a holiday we see limited availability on many items.  But we are in good shape today.  We have 3 types of Wild Salmon from Alaska available.  Wild King Salmon are about 12 pounds each.  Sockeye Salmon are around 6.  We also have Steelhead that are around 6 pounds as well.  All 3 are head off and gutted; so you are sure to get a great yield.  Maine Lobsters are here today and are climbing out of the tanks.  Dayboat East Coast Canadian Halibut are a can't miss today at 10 to 40 pounds.
 
Rhode Island Wild Striped Bass look wonderful this morning.  They are available in a variety of sizes.  Blackfish from Boston made a surprise appearance today.  Fluke remains a problem.  There simply aren't enough around to fill demand. 
 
We brought in wonderful Tuna from the Galapagos Islands and have Local fish on their way here.  We are also getting Local Swordfish and Mahi Mahi tonight.  U/10 and 10/20 Scallops are incredibly fresh our of Barnegat Bay, New Jersey.  Grey Tilefish from North Carolina are weighing in around 6 pounds.
 
Corvina from Ecuador is available.  We don't have any more today, but should be able to get more overnight.  Kona Kompachi is also available overnight.  16/20 Fresh Gulf Shrimp are perfect as always.  Red Snapper came in from Florida and are really fresh.
