Good Morning Chefs and Buyers,
 
A new week is here.  We're starting it off right with some fantastic local items.  Sea Trout are super fresh and weigh between 3 and 5 pounds.  Swordfish and Tuna came our way this morning from boats that fish from North Carolina up to New Jersey and ship directly to us.  We always get the best quality fish from this supplier.  Jumbo and Whale sized Soft-Shell Crabs appear to be the only sizes available right now.
 
Jumbo Black Sea Bass out of Boston continues to hold it's nice low price.  Wild Striped Bass is starting to trickle back in.  They are coming from Delaware, but are still very limited.  I recommend ordering them in advance.  U/10 and 10/20 Scallops came in from our friends in Barnegat Bay, New Jersey.
 
Shad Roe is making another appearance.  We are expecting it to be available for at least a few days.  Wild King Salmon is coming in from Alaska.  The fish average around 12 pounds and come in with the head off and gutted.  East Coast Canadian Dayboat Halibut is very fresh this morning.  They range in size from 10, all the way up to 40 pounds.
 
Fresh 16/20 Gulf Shrimp are terrific as always.  Red Snapper of all sizes came in this morning too.  Smaller sizes have been a problem for a while now, but we might be out of the woods.  Golden Tilefish, also from Florida, couldn't be fresher today and average about 8 pounds each.
