5.17.12

Good Morning Chefs and Buyers,
 
It's time to plan those weekend menus.  We brought in some wonderfully fresh items today and have more great stuff coming in overnight.  Local Swordfish pricing and quality can't be beat today.  Local Tuna of all grades is also available.  John Dory from local waters look terrific at 2 to 4 pounds each.  Soft-Shell Crabs are being a bit of a problem.  It looks like Jumbos are your best bet.  Other sizes are really hard to come by.
 
Jumbo Black Sea Bass out of Boston went down in price again.  The quality is still excellent and they weigh between 3 and 5 pounds each.  It looks like Cod is going to be a problem.  We weren't able to get any more Icelandic Cod so we are at the mercy of the Market Dayboat Cod from New England.  They are really nice quality, but availability and price are the main concerns.  Fluke is also an issue this week.  We are bringing in more large Flounder from George's Bank to help fill the void.  Dayboat East Coast Canadian Halibut are absolutely gorgeous today.  They range in size from 10 all the way up to 40 pounds.
 
Maryland and Louisiana both sent us incredibly fresh Crabmeat this morning.  Rain has forced closures for Uni.  We won't see any from Maine until at least Monday.  Sardines from Portugal are great as always.  We got lucky and tracked down some Monkfish Liver.  They are cheaper than the last time we brought them in and will make a great special.
