3.7.12

Good Morning Chefs and Buyers,
 
This beautiful weather is supposed to continue through the weekend.  Get ready to have people coming out of the woodwork looking to eat.  We tracked down enough #1 and 2+ Tuna to hold us over.  #2 Tuna is still up in the air.  Wild Striped Bass keeps pouring in from Delaware and Virginia.  The fish couldn't be fresher.  Dayboat East Coast Canadian Halibut looks like a great option today.  They are between 10 and 50 pounds.  Swordfish looks like it might be a problem going into the weekend.  We are having a hard time getting our hands on any fish.
 
We brought in some great items from New England this morning.  Gloucester Cod is beautiful at 8 to 10 pounds per fish.  Razor Clams from Maine finally found their way here after being unavailable for a few days.  It looks like Uni is going to be a problem.  We got in Live Urchin from Maine.
 
Pompano from Florida is available again.  Each fish is 3 to 4 pounds.  Red Snappers of all sizes came in this morning.  The same delivery gave us beautiful 8 to 10 pound Golden Tilefish and Fresh 16/20 Gulf Shrimp.  Soft-Shell Crabs are still showing up occasionally and the price has come down a bit.  We still can't find any Grouper.  We are unsure if any will be available.
 
Australian Hiramasa look great and are about 5 pounds each.  Guatemala sent us incredibly fresh head off Mahi Mahi.  The fish are pretty large and average about 15 pounds.  Our scheduled Sardines delivery is set to arrive tonight.  They come to us from Portugal and are always lovely.
