Good Morning Chefs and Buyers,
The market is back up and running and all of our suppliers apparently didn't have the day off because they sent us a ton of wonderful items today.  Dungeness Crabs are climbing out of the tank.  They are in from California and average around 2.5 pounds each.  Wild Striped Bass is going to be a little dicey for the next week or so.  Maryland has closed.  Virginia remains open and is sending us nice big fish.   Delaware is set to open on March 1st.  Gorgeous East Coast Canadian Halibut is here.  They are 10 to 50 pounds each.  Lump and Jumbo Lump Crabmeat is a problem.  We aren't able to track any down.  We are hoping to find some later this week.
Boston shipped super fresh items this morning.   Beautiful 9 pound Pollack came our way.  Jumbo Black Sea Bass are a can't miss at 3 to 5 pounds each.  10/20 and U/10 Scallops arrived this morning and couldn't be fresher.  Razor Clams from Maine are also available today.
We got our normal Florida delivery overnight.  Medium Stone Crab Claws look terrific.  Flawless 16/20 Freh Gulf Shrimp arrived as planned.  Nice 12 pound Sturgeon came in too.  Golden Tilefish is wonderful as always at 8 to 12 pounds per fish.  Moving west, more Redfish from Texas is here.  They look great and are 4 to 6 pounds.
Chile sent us more 3/4 Turbot.  Escolar came in from Ecuador this morning.  We have 2 80 pound fish.  Obviously, we are happy to cut you whatever size you need.  Head off Mahi Mahi from Guatemala made it's way here this morning as well.
